Creamy Tofu & Avocado Pasta (Oil-Free!)

It’s finally summer in Canada and that means I can eat all the fresh fruits, vegetables and herbs from my parents’ garden again! YAY for free food! Since they had fresh basil, I thought it was the perfect opportunity to make my avocado pasta again. This is a recipe I’ve been doing every summer since I was 16 years old. It’s a delicious mix between pesto and a creamy Alfredo sauce. What I did differently this time is I added protein. Not chicken like I used to do sometimes, but tofu! It’s blended right into the sauce and it packs over 14 grams of protein per serving without tasting like tofu! Chocolate Peanut Butter Soft Serve (Nice Cream!)

If you only try one of my recipes, this has to be the one! This is by far my most asked for recipe on Instagram. I don’t blame you guys, it’s the best! What could be better than an ice cream without any added sugar and that’s also lactose-free and vegan?! Nothing. The best part? It tastes JUST like regular ice cream! I might be wrong here since I haven’t had regular ice cream in 3 years, but it must be very close to the real thing if I can’t tell the difference. Golden Hummus with Curried Roasted Chickpeas

There’s hummus and then there’s golden hummus. Turmeric is quickly gaining popularity, so I was surprised not to see any turmeric hummus. I thought I’d give it a try and I was pleasantly surprised with the results! The color is really bright (as Shaun pointed out, it’s the color of pee… thank you Shaun, thank you.) Despite that comment, we both found this hummus SO flavorful. I also added cumin and garlic to give it a boost. I like to top it with crushed chili peppers, parsley and roasted chickpeas. Eat it with roasted carrots, crackers or raw vegetables and you got yourself the perfect snack or a quick healthy lunch.
