Pumpkin Bread (Gluten-Free, No Added Sugar)

If you’re looking for a last minute Thanksgiving dessert, I’ve got one for you! Last week I shared my Lentil Pot Pie and now I’m sharing the most delicious pumpkin loaf I’ve ever made. Make both and you’ll have a great vegetarian feast!  I was talking about pumpkin recipes with a friend (@veganeatstoronto) and she told me about a delicious pumpkin bread recipe from Detoxinista. She usually used this recipe and made a few modifications, so I thought I’d give it a try as well. I also had my pumpkin cookies in mind while trying this loaf. What I ended up with is a recipe similar to my cookies, but with a different texture. Good news: Unlike my cookies, this loaf is gluten-free! I started by adding all my…

Vegetarian Lentil Pot Pie

I have a great Thanksgiving recipe for you guys! Okay, Thanksgiving is over in Canada, but this one is for my American friends… Or anyone who wants comfort food. There’s nothing stopping you from making this recipe any time of the year. Seriously, winter is coming, so any day could use some healthy comfort food. I honestly think that every recipe I posted on this blog until now is comfort food… Soups, veggie burgers, cookies, pie, pasta, oatmeal… That’s all comfort food to me! Shaun said that we have a different definition of comfort food… I’m sure that’s also true for some of you, but to me, it’s anything with carbs! I seriously have to share a salad recipe on this blog soon. How can I not have a salad recipe…

Pumpkin Pie Smoothie Bowl (No Added Sugar)

Happy Saturday!  I hope you’re all having a great weekend? I actually have an extra long weekend. It’s a long weekend in New Brunswick, plus I went to a nutrition symposium on Thursday morning, so I only worked three days this week. The symposium was SO interesting! They talked about trendy diets (paleo, gluten-free), superfoods, the link between cardiovascular health and dairy products, saturated fats and the DASH diet. It made me love my field even more!  Since the symposium was in my hometown, I took the opportunity to visit my family Thursday and Friday before driving back to Saint John. I also went Christmas shopping and ended up buying only a book and tea for me…   I always have a hard time Christmas shopping. I have so many gift ideas…

Creamy Roasted Beet Hummus

Pink hummus is so much better than regular hummus. It just is.  There’s something about eating pink food that makes it so much more exciting. It would probably be a good way to convince kids to try hummus… If they love this color of course. When I was testing this recipe, I had to find creative ways to use up almost 3 cups of hummus in a week between Shaun and me. That’s a lot of hummus for two people! So not only was I dipping vegetables in it, I was making beet hummus, avocado, cheese and lettuce sandwiches every day of the week. It was an easy lunch for work and it helped me use most of it. I also love seeing the look on people’s face when they see me eating a…
