Last summer, I had the opportunity to be the photographer for a cookbook. Not just any cookbook, but my friend’s cookbook. Meet Julie-Ann Michaud, a nutrition student and a creative and talented cook. In the last year, she put all of her love and effort into this beautiful cookbook, in which she shares creative recipes adapted for a student budget. She used ingredients offered at our local food bank in order to give simple and healthy recipe ideas to those who benefit from those ingredients. Happy Friday! I’m sharing some delicious and easy granola bars today (the perfect recipe to make this weekend!). That’s what I did last weekend and I think I’ll do the same this Sunday. 4-Ingredient Chocolate Nice Cream Smoothie

This smoothie. I know that not everyone has a food processor or a Yonanas, so I wanted to make a blender version of my Chocolate Peanut Butter Soft Serve (Nice Cream). You get the same great taste as nice cream, but in the form of a smoothie. Okay, I should maybe call this recipe a shake because it tastes nothing close to a healthy and fruity smoothie… Nope, this recipe tastes exactly like a chocolate milkshake. I should mention that even though it doesn’t taste healthy, this shake/smoothie is as healthy as it gets.  It’s made with only four ingredients (FOUR)! It’s Global Pulse Day and I’m celebrating with a healthy Greek Quinoa & CHICKPEA Salad! Chickpeas are hands down my favorite pulses. My new favorite breakfast? Carrot cake oatmeal.  If you love carrot cake or if you’re trying to incorporate more vegetables into your diet, you need to try this recipe! Actually, even if you’re just looking for a new breakfast idea, you need this recipe in your life. One bowl holds one whole carrot or half a cup of shredded carrots. See?
