I should start by saying that these apple crumble bars are not only sugar-free, but they’re also gluten-free, vegan and nut-free! If I could eat only one thing for the rest of my life, I would choose these seriously addictive no-bake seedy granola bars. I can honestly make a batch of these bars and eat almost half of it throughout the day. One for a morning snack, one with lunch, one as an afternoon snack and one or two in the evening… Half of the batch, gone. Oups. It’s been a crazy week. We’re leaving for Gaspésie today after work and I still haven’t packed. I’m counting on the two hours I’ll have before leaving to pack everything and prepare our food for the trip. Lets see how that goes! I’m aware that it’s been only two weeks since my last post, but it feels like forever. Today I’m sharing with you Nut-Free Caramel Rice Crispy Squares and something that helped me survive a year without peanut butter.  If you knew me last year, then you know that I’m obsessed with peanut butter. I used to eat it 1-2 times a day every day of the week and I’m talking about a layer so thick, you start wondering if you’re having toast with your peanut butter.
