Nut-Free Strawberry Vanilla Crumble Bars

I’m back with these nut-free strawberry vanilla crumble bars! First of all, happy belated Canada day (and 4th of July)! I’m aware that it’s been only two weeks since my last post, but it feels like forever. I blame it on everything that has been going on since I last shared a recipe.  I finished my dietetic internship. I started my career as a dietitian at the hospital. We moved in our new apartment. I think that was enough to keep me busy over the last few weeks! You may have seen some pictures of our new apartment on Instagram stories. I shared a few behind the scenes during our move and I recently shared some after pictures. We finished unpacking everything almost 2 weeks ago – I love cleaning and organizing…

Mini Sugar-Free Cookie Dough Cheesecake

I’m back with another recipe before Easter!  This time, I’m sharing these mini sugar-free cookie dough cheesecakes. I know, two cookie dough recipes in a row… I’m not even sorry.  Here’s how the recipe goes: The base is a raw cookie dough cup made with dates, roasted cashews, oats, vanilla and cocoa nibs. Very similar to the cookie dough bites in my brownie cookie dough “ice cream” bars. It’s the BEST! I actually just used the base as a snack for work the other day and when Shaun came home, he asked me what I put in it. He said “It’s so sweet, it tastes like candy!”. Yes Shaun, it really does.  The cream cheese frosting is made…

Brownie Cookie Dough “Ice Cream” Bars

I waited long enough to share this recipe with you guys, but I think Easter is the perfect occasion.  Not only is this Easter weekend, but it’s also my birthday weekend! It’s actually my 23rd birthday today, but since I’m working all day, I’ll be celebrating tomorrow.  I think this week was the busiest week of my internship yet. First, it was a staff experience week, which means I took over the dietitian’s workload for the week. I was working as a dietitian in oncology, psychiatry and the HIV clinic all week. I also had to spend some time at night writing down a self-evaluation about my daily performance as part of my staff experience week. I then spent the rest of my evenings testing recipes for…

Chocolate Orange Fudge Cake (With a Secret Ingredient!)

Are you getting tired of desserts yet? I know I am. But before we get into all the healthy January recipes, I wanted to share one last sweet treat with you guys! I promise, it’s SO worth it. And it’s a great dessert for any New Years Eve party. This will be our dessert for sure! <— We’re having an introvert party at home, eating fancy pasta with cake and wine while playing board games. Yup, that’s my kind of party. Hah! All I have to say is that this has to be the healthiest cake ever. The secret ingredient? Sweet potatoes! It’s also made with dates, olive oil, coconut and almond milk, cocoa powder, cashews, spelt flour, orange juice… Not only…

The Best Sugar-Free Apple Crisp

October is almost over and if you’re like me, you’re probably searching for ways to use up all the apples you picked this fall. Apple crisp is always my go-to. I hesitated to call this recipe “the best” because first of all, I’m not that confident in myself and second of all, it’s based on my opinion. However, when I tried to find a sugar-free version, I wasn’t surprised to find that every recipe contained either artificial sweeteners or maple syrup/honey. I don’t like the term sugar-free for that reason. Every time I see a sugar-free recipe, it either contains artificial sweeteners or maple syrup and honey. They might not be “refined sugars”, but they’re still very sweet, which would trigger my cravings…
