Quick & Easy Chickpea Salad Sandwich

(This post is sponsored by Silver Hills Bakery) Today is all about easy lunches for school or work. More specifically, I’m sharing with you one of my favorite sandwiches: This quick and easy chickpea salad sandwich. Along with my other favorite lunchbox friendly recipes from the blog.  I first started making this sandwich approximately 3 years ago. I used a few recipes as inspiration, but most of the time, I just mixed whichever ingredients I had on hand without measuring. I just wanted something quick and filling for my lunches at work or university. I have no time for complicated lunches in the morning and I’m sure I’m not alone! For that reason, this sandwich has been my go-to lunch over the last few years, especially when I’m short on time.&nbsp…

Marinated Tofu Sandwich + Salad

A short little post for a good little recipe. This marinated tofu is all I’ve been craving lately. Yes, I do crave tofu and vegetables sometimes. What I really mean is that I’m slowly starting to crave those fresh, spring recipes. It’s about time! It felt like a long winter around here (I’m not even sure it’s done yet), but I’m finally seeing the end of it! The sun is shinning outside and we’re starting to get temperatures above 0ºC, so all is good. It was also Shaun’s birthday Saturday and mine is next week, so April is an exciting month around here!  Now this tofu. If you’re looking for an easy lunch or weeknight dinner, you need to…

Simple Avocado Toasts – 3 Different Ways!

Lately I feel like I’ve been living off avocado toasts. They’re so easy, filling and nutritious, I figured they were the perfect meal while moving in our new apartment. After a while though, plain avocado and lemon on toasts can become a bit boring. That’s when I started mixing things up and trust me, these avocado toasts are NOT boring! I came up with 3 different toasts, so let’s get right into it. My first avocado toast includes strawberries, melted Brie cheese (the best part!), balsamic vinegar and pistachios. I think this one is my favorite. I mean, strawberries, Brie and avocado!? There’s no better combination. Not during summer anyways. If you’re skeptical about adding fruits to your toast, don’t be, it’s the…

Naan Avocado Toast with Dukkah & Pan-Fried Chickpeas

This month, it’s all about using the ingredients I already have in my pantry. If you follow me on Instagram or Snapchat (unsweetenedcaro), you probably know by now that we’re moving! I’m doing my dietetic internship in Saint John this September, so we’re moving an hour and a half away from the place I always called home. Yes, I know an hour and a half isn’t a big deal, but I’ll still miss Moncton. It also means that I can’t bring the food I have in my freezer and I’d rather not bring what I have in the fridge… Not only that, but I’m moving in an apartment with Shaun and my friend who’s allergic to peanuts. I…
