Say hello to my new go-to weeknight dinner.  At this point of my internship, there’s no time to waste on complicated meals. This chickpea stew is not only easy, but it’s also budget friendly (hello legumes, canned tomatoes, rice, onions and spices!), wholesome and filling. I’m exhausted.  Who can relate? It probably doesn’t help that we lost an hour of sleep last weekend, but to be honest, this internship is getting the best of me. Easy Black Bean Quinoa Chili

If I’d have to choose one recipe to eat on repeat for supper this winter, it would be this quinoa chili. There’s just something about eating a warm bowl of thick chili that makes me happy. Especially when it’s -10ºC outside like it has been this week. After work on Monday, I went directly to the park for a small hike. Happy Monday!  How was your weekend? We had a quiet weekend at home which was a nice change. Friday night, Shaun and I went for a small hike, then we had popcorn and wine while watching a movie.
