Peanut Butter & Chia Jam Overnight Oats

This week, I’m eating as much peanut butter as I possibly can.

It’s our last week in Moncton before moving to our new apartment in Saint John! Since our roommate is allergic to peanuts and we won’t be able to eat some for a year, I made all the peanut butter recipes I could in the last few weeks. I saved a few of them, which I’m planning to share with you guys later this summer, but today I’m sharing one of my favorites!

It’s a twist on my all time favorite breakfast: Peanut butter Banana Oatmeal. I can’t get enough!!! In this heat wave though, I must admit that hot oatmeal doesn’t seem too attractive… That’s when I turn to my second go-to breakfast: overnight oats. I’m predictable, I know!!

All you need to do is add oats, milk and chia seeds in a jar and put it in the fridge overnight. The next morning, you add your choice of toppings and run out the door! In my version, I added peanut butter and chia jam, a great sugar-free alternative to store-bought jelly. I recommend that you make the jam the night before so you can let it set overnight. You simply warm up your berries in a small saucepan, mash them, add chia seeds and let it simmer for 10 minutes. The chia seeds will absorb the liquid and you’ll get a thick sugar-free jam! If you’re into Sunday meal prep, you could make big batches of jam and oats to enjoy throughout the week!

Overnight oats are the solution to everything: heat, lack of time and hangry mornings. Trust me when I say you’ll be full until noon with this one! That’s coming from someone who needs to eat every two hours… If anything can tame the monster that is me without food, it’s oatmeal. 😉

Seriously though. Peanut Butter + Jelly + Oatmeal… BEST BREAKFAST EVER!

Vegan, refined sugar-free, gluten-free, soy-free, oil-free

Serves: 2

Prep time: 20 minutes

Ingredients

Oats

  • 1 cup quick oats (or rolled oats)
  • 2 tablespoons chia seeds
  • 1 1/2 cups unsweetened vanilla almond milk (or any other milk)
  • 1 large ripe banana (or 2 small)
  • 3 tablespoons peanut butter

Chia jam

  • 1 cup fresh or frozen berries of choice (I used a mix of strawberries and raspberries)
  • 1 1/2 tablespoons chia seeds
  • 1/2 teaspoon vanilla (optional)

Instructions

The night before

  1. Make the chia seed jam: In a medium saucepan, add berries. Let them warm up over medium heat for 2-3 minutes. Using a potato masher, mash the berries (leaving a few chunks if desired) and add the chia seeds. Reduce heat and let simmer for 10 minutes. Store in an airtight container overnight where it will thicken even more.
  2. Prepare the overnight oats: Add oats, chia seeds and milk in a jar or container, making sure the chia seeds are mixed into the oats. Leave in the fridge overnight.

The next morning

  1. Add 1/4 cup of chia jam to your oats. Add your peanut butter and your banana before mixing everything together. Add any other desired toppings, like fresh berries for example.
  2. Store leftovers in an airtight container in the fridge. You can use your leftover chia jam on toasts, yogurt or more oatmeal!
