My Go-To Avocado Toasts + Exciting News!

In 3 weeks, I’ll be working as a clinical dietitian! I got selected to work in cardiology, oncology and surgery in the largest hospital/cardiac center of the province. I’ll be working 4 days a week and I won’t have internship or university projects anymore, which means I’ll be able to spend more time testing out new recipes. I’m so excited for this next step! I’m finishing my internship 2 weeks early and I’ll finally be able to start my career as a dietitian. 5 years of hard work pays off! I still have 2 weeks to go and 2 big projects to finish, which means I have no time to waste. Some meals have helped get me through my last 5 years as a student…

Simple Avocado Toasts – 3 Different Ways!

Lately I feel like I’ve been living off avocado toasts. They’re so easy, filling and nutritious, I figured they were the perfect meal while moving in our new apartment. After a while though, plain avocado and lemon on toasts can become a bit boring. That’s when I started mixing things up and trust me, these avocado toasts are NOT boring! I came up with 3 different toasts, so let’s get right into it. My first avocado toast includes strawberries, melted Brie cheese (the best part!), balsamic vinegar and pistachios. I think this one is my favorite. I mean, strawberries, Brie and avocado!? There’s no better combination. Not during summer anyways. If you’re skeptical about adding fruits to your toast, don’t be, it’s the…

Naan Avocado Toast with Dukkah & Pan-Fried Chickpeas

This month, it’s all about using the ingredients I already have in my pantry. If you follow me on Instagram or Snapchat (unsweetenedcaro), you probably know by now that we’re moving! I’m doing my dietetic internship in Saint John this September, so we’re moving an hour and a half away from the place I always called home. Yes, I know an hour and a half isn’t a big deal, but I’ll still miss Moncton. It also means that I can’t bring the food I have in my freezer and I’d rather not bring what I have in the fridge… Not only that, but I’m moving in an apartment with Shaun and my friend who’s allergic to peanuts. I…

Creamy Tofu & Avocado Pasta (Oil-Free!)

It’s finally summer in Canada and that means I can eat all the fresh fruits, vegetables and herbs from my parents’ garden again! YAY for free food! Since they had fresh basil, I thought it was the perfect opportunity to make my avocado pasta again. This is a recipe I’ve been doing every summer since I was 16 years old. It’s a delicious mix between pesto and a creamy Alfredo sauce. What I did differently this time is I added protein. Not chicken like I used to do sometimes, but tofu! It’s blended right into the sauce and it packs over 14 grams of protein per serving without tasting like tofu! One serving also has 10 grams of fiber and some healthy fats from the avocado, all under 400 calories! If you want even…
