Chai-Spiced Cut-Out Cookies

As I’m writing this, we’re having our first snow storm of the season. I think this recipe is perfect for the occasion! It would be a little more exciting if I could of stayed home and have a snow day, but it doesn’t work like that for my internship… I miss university! <— Here’s a sentence I never thought I’d say. 😉  Nevertheless, I braved the storm and arrived safely home after work. Now I’m warming up inside with a cup of coffee and a little Rudolph donut (you can get the recipe on my Instagram and Facebook page!). These cookies (and my donuts) were my project last weekend. I wanted to share Christmas desserts with you and I’m very happy with…

Easy Date Caramel Pecan Pie

First it was Caramel & Coconut Latte Overnight Oats and now it’s a caramel pecan pie. Now you understand why I posted a date caramel tutorial? 😉 Seriously though, to me, fall is all about pumpkin and salted caramel. And soup. There’s nothing better than going on a hike when the leaves are changing and coming home to a comforting bowl of soup. Ah I love fall! I have so many recipes to share with you guys in the next few months! I just need to take the time and write the post which is not always easy. The internship is certainly taking up a lot of my time.  Speaking of which, I can’t believe it’s already my fourth week of internship. This year will be gone before I know it! It…

Caramel & Coconut Latte Overnight Oats

Here I am, writing on a Saturday again!  This internship is certainly keeping me busy during the week. I woke up at 4:45 in the morning for the last few days (including this Saturday!) for a big catering event. Yup, I’ll enjoy sleeping in tomorrow… By that, I mean waking up at 7 am without an alarm. The problem with being a morning person!  Other than the lack of sleep, I’m really enjoying my experience so far! I’m starting my internship with 11 weeks of food service management in the hospital. Then, I’m doing 18 weeks of clinical nutrition. During those weeks, I’ll be doing many different rotations, including diabetes, tube feeding, rehab, renal, neurology, cardiac, plastic surgery, burns, pediatrics, obstetrics (I’m so excited…

Healthy Caramel Frappuccino with Coconut Whipped Cream

When you stop eating added sugar, you soon realize that there is a lot of food you can’t eat anymore. Just think about it. People seem to associate sugar with desserts, but the truth is, pretty much everything that’s processed contains sugar. Some granola bars and breakfast cereals should even be considered a dessert. Then there’s the even less obvious sources of added sugar. Think mayonnaise, ketchup, some breads, salad dressings and even chips! So when I first stopped eating sugar, you can imagine that I was overwhelmed. I went to the extreme and cut out every single source of added sugar. Now, after 2 years sugar-free, I’m a little more flexible. I know that eating ketchup or white bread at the restaurant won’t give me uncontrollable cravings. What…
