Seriously Addictive No-Bake Seedy Granola Bars

If I could eat only one thing for the rest of my life, I would choose these seriously addictive no-bake seedy granola bars. I can honestly make a batch of these bars and eat almost half of it throughout the day. One for a morning snack, one with lunch, one as an afternoon snack and one or two in the evening… Half of the batch, gone. Oups. Let’s be real, Valentine’s Day needs chocolate. And pasta… And wine. That’s my opinion, but then again, I’m always up for pasta, wine and chocolate. Unfortunately, Valentine’s Day ends up on a Tuesday this year, which means I’ll be celebrating it at the hospital, working in family medicine. <— Not so romantic.  We are planning on going out for a romantic dinner the weekend before though. Here I am, writing on a Saturday again!  This internship is certainly keeping me busy during the week. I woke up at 4:45 in the morning for the last few days (including this Saturday!) for a big catering event. Yup, I’ll enjoy sleeping in tomorrow… By that, I mean waking up at 7 am without an alarm. The problem with being a morning person!  Other than the lack of sleep, I’m really enjoying my experience so far! I’m starting my internship with 11 weeks of food service management in the hospital. Then, I’m doing 18 weeks of clinical nutrition.
