Rudolph Nutella Donuts & Other Healthy Holiday Desserts

Happy Christmas Eve Eve! Here it is, a compilation of all my holiday desserts! I hope you find some inspiration for last-minute Christmas treats or even last-minute gifts?! Suggestion: fill a beautiful box with a loaf of pumpkin bread, truffles and cut-out cookies, then add a gift card for your friend/relative’s favorite restaurant! You could even add a copy of your favorite cookbook in there. It’s the ultimate foodie gift.  Now enjoy these Christmas desserts, plus a new recipe at the end. 🙂 Easy Holiday Truffles I posted these truffles earlier this week and they’re the perfect addition to your holiday feast! They’re probably the healthiest and easiest truffles you’ll ever find. They’re made from only 3 ingredients, then rolled in beet powder, coconut…

Creamy Sugar-Free Hot Chocolate

A sugar-free hot chocolate that’s better than any sugar-filled hot chocolate? YES PLEASE.  Enter this creamy sugar-free hot chocolate… Or as I like to call it: Gingerbread men hot tub. You can’t tell me that’s not what it looks like? 😉  Just look at that frothy hot chocolate… I’m envying that cookie. It’s -30ºC here today and the wind is strong, so a hot tub would be nice. Or a vacation on a tropical island.  I don’t know what’s wrong with me, but I’ve been feeling extremely drained in the last month. I come home from work exhausted and I go to bed at 9 pm at the latest. Then I wake up at 6 am…

Chai-Spiced Cut-Out Cookies

As I’m writing this, we’re having our first snow storm of the season. I think this recipe is perfect for the occasion! It would be a little more exciting if I could of stayed home and have a snow day, but it doesn’t work like that for my internship… I miss university! <— Here’s a sentence I never thought I’d say. 😉  Nevertheless, I braved the storm and arrived safely home after work. Now I’m warming up inside with a cup of coffee and a little Rudolph donut (you can get the recipe on my Instagram and Facebook page!). These cookies (and my donuts) were my project last weekend. I wanted to share Christmas desserts with you and I’m very happy with…

Hearty Oatmeal Breakfast Cookies

Now I know these aren’t exactly the kind of cookies you’re looking for during the holidays, but don’t turn them down just yet! It might be December, but we still have 3 weeks before Christmas, so it would probably be a good idea to continue eating healthy for a bit. That way, you can indulge in your favorite treats around Christmas without gaining an extra 10 pounds in December.   So today I’m not sharing Dark Chocolate Mint Truffles (these will come later), but I’m sharing healthy breakfast cookies! Who doesn’t want cookies for breakfast!?  These little cookies are packed with nutrients. One cookie contains healthy fats and 3 grams of protein and fiber, all under 112 calories. So it’s totally appropriate to eat 2…

Spelt Oatmeal Pumpkin Cookies

Who’s planning to do some Sunday baking?! I AM! If you weren’t planning on it, then I might try to change your mind. Seriously, your Sunday needs these pumpkin cookies! Don’t worry, they’re also healthy. I made them with spelt flour, dates, pumpkin puree, oats and more delicious ingredients and spices. I honestly eat them for a morning snack every morning at work and they definitely help me get through my early shifts. That and coffee of course.  Also, this is the best cookie dough I’ve ever tasted. Better than any sugar-filled cookie dough. I actually made this recipe this morning and left half of the batch uncooked in the fridge… and no I’m not planning to cook them later. I’m planning to…
