Easy Black Bean Quinoa Chili

If I’d have to choose one recipe to eat on repeat for supper this winter, it would be this quinoa chili. There’s just something about eating a warm bowl of thick chili that makes me happy. Especially when it’s -10ºC outside like it has been this week. After work on Monday, I went directly to the park for a small hike. I’ve been feeling the stress of the internship in the last few weeks and my favorite way to reduce my anxiety is to go for a walk in nature. The effect is almost immediate. So Monday, after work, I drove directly to the nearest park (which is 2 minutes from the hospital where I work) and hiked for 45 minutes in the cold. It was a last minute decision, so…

Creamy Roasted Beet Hummus

Pink hummus is so much better than regular hummus. It just is.  There’s something about eating pink food that makes it so much more exciting. It would probably be a good way to convince kids to try hummus… If they love this color of course. When I was testing this recipe, I had to find creative ways to use up almost 3 cups of hummus in a week between Shaun and me. That’s a lot of hummus for two people! So not only was I dipping vegetables in it, I was making beet hummus, avocado, cheese and lettuce sandwiches every day of the week. It was an easy lunch for work and it helped me use most of it. I also love seeing the look on people’s face when they see me eating a…

Golden Roasted Cauliflower Dahl

I have more comfort food for you guys! And it’s the perfect recipe to make on a rainy weekend like this one.  I actually have the apartment to myself this weekend, something that doesn’t happen often when you have two roommates! Since it’s raining all weekend, I’m planning to do some recipe testing and a few projects for my internship, but other than that, I’m relaxing! I really have to catch up on my sleep. These morning shifts are killing me lately! I’m a morning person and I love morning shifts, but lately I’m not used to getting up so early. This week I’ve been going to sleep at about 11:00 every night (which is late for me) and waking up before 6:00…

Easy Date Caramel Pecan Pie

First it was Caramel & Coconut Latte Overnight Oats and now it’s a caramel pecan pie. Now you understand why I posted a date caramel tutorial? 😉 Seriously though, to me, fall is all about pumpkin and salted caramel. And soup. There’s nothing better than going on a hike when the leaves are changing and coming home to a comforting bowl of soup. Ah I love fall! I have so many recipes to share with you guys in the next few months! I just need to take the time and write the post which is not always easy. The internship is certainly taking up a lot of my time.  Speaking of which, I can’t believe it’s already my fourth week of internship. This year will be gone before I know it! It…

How-To: Date Caramel

Hi there! I know it’s the weekend, but with my dietetic internship and all, I didn’t get the chance to post anything this week. So here I am, writing a blog post on a Saturday morning! Now, since autumn is coming, I have many salted caramel recipes in mind. For that reason, I wanted to share my date caramel recipe with you guys. Trust me, you’ll see date caramel in my next couple of posts! I hope that’s not a problem? 😉  Date caramel is a life saver when you rely on fruits to sweeten your desserts. I use it as a replacement for caramel obviously, but also as a replacement for liquid sweeteners. Bananas are great and all, but I usually use them in frozen desserts (nice cream!) or banana flavored…
