Nut-Free Caramel Rice Crispy Squares + SunButter Giveaway!

Today I’m sharing with you Nut-Free Caramel Rice Crispy Squares and something that helped me survive a year without peanut butter.  If you knew me last year, then you know that I’m obsessed with peanut butter. I used to eat it 1-2 times a day every day of the week and I’m talking about a layer so thick, you start wondering if you’re having toast with your peanut butter. That had to change when I moved to Saint John for my dietetic internship. I moved in with my friend who’s severely allergic to peanuts, which meant no peanut butter in the apartment. I needed to find a replacement. Of course, Catherine (my roommate) had found some great products over the years and had a few…

Lemon Sweet Pea Hummus

Today I’m sharing the recipe for this delicious spring-inspired lemon sweet pea hummus.  When I’m not trying a hummus recipe from one of the few cookbooks I own, I usually just throw all the ingredients in the food processor and hope for the best. It’s one of those recipes that I made so many times that I can just guess the amount of each ingredient needed. It helps that hummus is a very simple dish that can be made many different ways, while still tasting great. Don’t get me wrong, it is possible to make bad hummus (been there!), but today, I’m sharing a good one. Like most hummus recipes, this one is very simple. Just throw all the ingredients in a food processor or high-speed blender…

Sugar-Free Breakfast Banana Bread

Banana bread has got to be one of my favorite desserts. Notice here that I said dessert. I’m aware that banana bread is often seen as an “appropriate” breakfast item, but have you ever noticed how much sugar is added to a traditional banana bread? It’s terrifying. I’ll admit that there was a time I did eat sweetened breads for breakfast. In fact, it was my breakfast of choice when I woke up at 5 am to go to swim practice. < — Fun fact, I was once a competitive swimmer.  With that in mind, I wanted to try making a banana bread that would indeed be healthy enough for breakfast. This recipe has been on my mind for a while now and I regret every second I waited before…

Luxurious Chocolate Chia Pudding Parfait

As I look out the window, everything is white. It seems that winter has just started in our part of Canada and I’m not sure how I feel about those recent cold temperatures and constant snow storms. It’s truly a winter wonderland – A very cold winter wonderland. It’s a good thing I’m not tired of winter yet. I’m still excited about walking in the trails, surrounded by snow-covered trees and frozen lakes. I still love coming home to a warm cup of tea and a comforting bowl of soup. I like staying cozy inside during a snow storm, watching a movie and eating cookies. Sadly, my love for winter doesn’t last forever and by the end of the month, I’ll be craving the sunshine…

Dreamy Coconut Macaroon Truffles

Let’s be real, Valentine’s Day needs chocolate. And pasta… And wine. That’s my opinion, but then again, I’m always up for pasta, wine and chocolate. Unfortunately, Valentine’s Day ends up on a Tuesday this year, which means I’ll be celebrating it at the hospital, working in family medicine. <— Not so romantic.  We are planning on going out for a romantic dinner the weekend before though. We’re going to one of our favorite places, which is a cozy Italian restaurant (hello pasta and wine!). I don’t believe that we need a day like Valentine’s Day to spend a romantic evening with our loved one, but honestly, I’m up for any occasion that lets me dress up…
