Are you doing veganuary this year? If you’re not familiar with it, veganuary encourages people to try out a vegan diet for the month of January. It’s a great way to try out this way of eating and possibly encourage others to continue eating a plant-based diet (or more plant-based meals) moving forward.

Most of the recipes I share on Unsweetened Caroline are vegan (along with some vegetarian recipes), so I thought I’d gather all my favorites here to make it easier for you to find them this month. That way, you can find a lot of plant-based inspiration in one place!

In this post, I divided (almost) all of my vegan recipes in categories, including breakfasts, snacks, soups and salads, hearty mains, basics, sweet treats and beverages. There’s something for everyone!
