Green Curry with Cannellini Beans

Green curry with cannellini beans. Because we still have at least one month of winter-like weather here and I’m not about to give up on comfort food just yet. This curry has been months in the making and I’m happy to finally share the recipe with you today. I made it for the first time in December before leaving for California and I somehow put it on hold until a few weeks ago. Since then, I tested it at least 4 times (one of which was a failed attempt to make it in the Instant Pot). Trust me, this is not an Instant Pot recipe, unless you want a curried cream of broccoli soup. Yes, it was pure mush. Thankfully, the stove top version turned out delicious. The broccoli is just slightly cooked to keep its texture…

Vegan Caesar Salad with Chickpea Croutons

If there’s one salad I could eat for the rest of my life, it would be this vegan Caesar salad with chickpea croutons. I’m a bit paranoid when it comes to eating raw eggs, which is just one reason why I prefer vegan Caesar salad over the original. That’s my opinion of course, but really, you’re not missing out on anything with this salad. The dressing is salty and full of flavor. The salad is topped with crispy roasted chickpeas and a delicious vegan parmesan. It’s the most flavorful (and garlicky) salad and I LOVE it. This vegan Caesar salad is inspired by Oh She Glow’s recipe, which is made with a cashew-based dressing. I made her recipe countless times over the past 4 years and with time, I developed my own version…

The Healthiest Banana Bran Muffins

Welcoming a new week with a new muffin recipe. This time, I have the healthiest banana bran muffins for you guys. Where do you stand on bran muffins? Do you like them? Personally, they were never my go-to muffin flavor, but I do appreciate their extra dose of fiber. And really, I’m up for any healthy baked good. I’m calling these muffins the healthiest banana bran muffins for good reasons. First, they’re sweetened with fruit (as are all my recipes). Second, they’re made with whole wheat flour (believe it or not, but most bran muffins aren’t). Finally, they’re packed with fiber thanks to the added bran. That last one goes for every bran muffin of course. Put all of these things together and you’ve got…

Loaded Lentil Burritos

I think this Friday calls for loaded lentil burritos. What do you think? It’s been a long busy week (as are all my weeks, really) and I’m looking forward to having an extra day off on Monday for Family Day. By day off, I mean one extra day to test and photograph recipes, but when you love what you do, it still often feels like a vacation. Or at least most of the time. There’s a snow storm here as I’m writing this and I can’t think of a better day to stay cozy inside, working in the kitchen. A day like this calls for baking and cooking healthy comfort food. Today though, I’m sharing these delicious loaded lentil burritos. Do you remember the lentil taco meat I shared a…

Pink Berry Lime Smoothie

If it’s as cold where you live as it is here in Canada, I’m sure the last thing you want is a smoothie. Believe me though, this berry lime smoothie is worth freezing for. If you’re like me and you sometimes crave a smoothie during winter, just make yourself cozy in a pile of blankets (maybe next to a fire place) and enjoy it. This smoothie is the result of a mid-winter smoothie craving and tons ripe avocados that desperately needed to be used. Honestly, I’m not sure why I keep buying avocados from Costco. They’re much cheaper, but I always end up with either 6 hard avocados or 6 overly ripe avocados at the same time. Perfectly ripe avocados, ready to use when you want them. That&#8217…
