Fruit-Sweetened Apple Muffins

Fruit-Sweetened Apple Muffins. Canadian Thanksgiving is just around the corner and for those of you who are looking for recipes to make this weekend, I’ve got a great healthy dessert for you. Or snack. Or breakfast. These apple muffins can pass for all three. It may be Thanksgiving in Canada this weekend, but this is an everyday recipe that I hope you’ll love. Healthy whole wheat muffins sweetened with bananas and apples. While I did call them apple muffins, they do have a banana bread flavor to them. Either way, they’re delicious! One bowl and 30 minutes is all you need to get muffins all week. Similarly to my banana bread, I recommend serving these with nut or seed butter. Maybe some apple butter too… I need to try this as soon as possible…

Sugar-Free Peanut Butter & Jelly Muffins

Sugar-free peanut butter & jelly muffins, my new favorite snack. Also, welcome to March! How are we 3 months into 2018 already?! It seems like just a few weeks ago we were celebrating New Year… Without me noticing, March arrived and with it came nutrition month. I wish I could say I prepared something for the occasion, but that didn’t happen. It was March 2nd when I realized nutrition month had started already and I didn’t have anything planned. I started brainstorming some ideas on my walk to work and instantly felt overwhelmed, so I decided to keep it easy. The theme for nutrition month this year is “unlock the potential of food”, including the potential to fuel, discover, prevent, heal and bring us together. The potential to discover encourages fostering healthy eating habits in children by…

Sugar-Free Cardamom Blueberry Muffins

It’s time to start thinking about back to school again and I’m here to help with these little sugar-free cardamom blueberry muffins. Actually, this is the first year that I’m not going back to school. I still can’t believe it. No more university for me! Unless I decide to go back in the future that is. But for now, I don’t have to get ready for a new semester. However, that doesn’t mean I don’t have to worry about what I should add to my lunch box every day. That’s a constant struggle. Does anyone else hate making their lunch for work or school? I never seem to have a good lunch, unless I have leftovers from the day before… I do…

Sugar-Free Breakfast Banana Bread

Banana bread has got to be one of my favorite desserts. Notice here that I said dessert. I’m aware that banana bread is often seen as an “appropriate” breakfast item, but have you ever noticed how much sugar is added to a traditional banana bread? It’s terrifying. I’ll admit that there was a time I did eat sweetened breads for breakfast. In fact, it was my breakfast of choice when I woke up at 5 am to go to swim practice. < — Fun fact, I was once a competitive swimmer.  With that in mind, I wanted to try making a banana bread that would indeed be healthy enough for breakfast. This recipe has been on my mind for a while now and I regret every second I waited before…

Pumpkin Bread (Gluten-Free, No Added Sugar)

If you’re looking for a last minute Thanksgiving dessert, I’ve got one for you! Last week I shared my Lentil Pot Pie and now I’m sharing the most delicious pumpkin loaf I’ve ever made. Make both and you’ll have a great vegetarian feast! I was talking about pumpkin recipes with a friend (@veganeatstoronto) and she told me about a delicious pumpkin bread recipe from Detoxinista. She usually used this recipe and made a few modifications, so I thought I’d give it a try as well. I also had my pumpkin cookies in mind while trying this loaf. What I ended up with is a recipe similar to my cookies, but with a different texture. Good news: Unlike my cookies, this loaf is gluten-free! I started by adding all my wet ingredients…
