My favorite way to cook steel-cut oats: In the Instant Pot. Guys, I recently started making steel-cut oatmeal in the Instant pot and it’s life-changing. I know it sounds a bit extreme, but the reality is, it makes it possible to eat steel-cut oats during the week. Cooking steel cut oats on the stove top does take more time than rolled oats, which is why I don’t cook them often. Healthier whole wheat vegan biscuits, perfect for holiday entertaining! Biscuits always had their part in all of our big family dinners. More specifically, growing up, my grandmother would always make us homemade biscuits to have as a snack or as a dessert in a strawberry shortcake. Strawberry shortcakes were our favorite, especially served with ice cream. Now I wanted to create a healthier version to our traditional white flour biscuits. My version is made vegan and a little heartier (but still so good) with whole wheat flour. If you’re not into whole wheat flour, don’t worry, you can easily sub the flour for all-purpose white flour! Or snack. Or breakfast. These apple muffins can pass for all three. It may be Thanksgiving in Canada this weekend, but this is an everyday recipe that I hope you’ll love. Healthy whole wheat muffins sweetened with bananas and apples. While I did call them apple muffins, they do have a banana bread flavor to them. Either way, they’re delicious! One bowl and 30 minutes is all you need to get muffins all week. Similarly to my banana bread, I recommend serving these with nut or seed butter.
