Chocolate Peanut Butter Soft Serve (Nice Cream!)

If you only try one of my recipes, this has to be the one! This is by far my most asked for recipe on Instagram. I don’t blame you guys, it’s the best! What could be better than an ice cream without any added sugar and that’s also lactose-free and vegan?! Nothing. The best part? It tastes JUST like regular ice cream! I might be wrong here since I haven’t had regular ice cream in 3 years, but it must be very close to the real thing if I can’t tell the difference. I got Shaun obsessed with nice cream too, so that’s a good thing right? Don’t tell me this doesn’t look delicious!?   Another great thing about this recipe is that…

My Classic Peanut Butter Banana Oatmeal

This wasn’t supposed to be today’s blog post, but I got too busy with work to test the other recipe one last time so it will have to wait until tomorrow! The struggle of working full time and blogging on the side. Thankfully, I had this recipe ready for tomorrow, so here it is, one day early! I have been eating oatmeal for breakfast for over 6 years now. In the beginning, it was those sugar laden bags of Quaker oats, but a lot has changed since then, including my obsession for peanut butter and the fact that I quit sugar. Now I make my own oatmeal flavors. I like to change the toppings once in a while, but the base is almost always the same: peanut butter and banana. It’s a match made in…

Healthy Digestion Smoothie

I have the most refreshing drink for you to enjoy this summer! I created this recipe when I was at the end of the low FODMAP diet a few weeks ago and I’ve been enjoying it ever since! For those of you who don’t know, the low FODMAP diet is a “diet” recommended for those who have irritable bowel syndrome. You simply avoid or limit certain foods high in FODMAPs (sugars that may not be digested or absorbed well and could be fermented by bacteria in the intestines when eaten in excess.) You follow this for a few weeks and then reintroduce them one at a time to determine if they worsen your symptoms or not. It’s not a long term diet, but rather a method to identify what triggers your symptoms. You should be guided by…

Raw Espresso Donuts

Welcome to my first blog post! As you may know, to celebrate my Unsweetened Caroline release week, I decided to post one recipe every day this week for a total of 7! I’m so excited to start sharing my favorite recipes with you and I hope you will enjoy them as much as we do. Now, are you ready for the first recipe!? I sure am! Especially since it’s a dessert (are donuts considered breakfast or dessert? It’s all so confusing to me.) Breakfast or dessert, this recipe is delicious either way! I personally prefer them as dessert, but if I ever need a quick breakfast, I wouldn’t mind having one of these. As a matter of fact, we went on a backpacking trip last weekend and I brought these donuts for an easy breakfast…
