Spiced Banana Cake with Cream Cheese Frosting

April is a month full of celebrations for us, so it only made sense that I shared my favorite cake recipe: This spiced banana cake with cream cheese frosting. This recipe is inspired by Snixy Kitchen’s banana date cake, which I made for the first time last April. I haven’t stopped thinking about it since. Since today is my 24th birthday (where does the time go?!), I knew I had to make this cake again – with a few modifications to make it fruit-sweetened. I also made it for Shaun’s birthday (and Easter) on April 1st. Then I made it again last weekend to photograph and to adjust the recipe as needed. Finally, I’m making it one more time this weekend for myself. I mean, it’s my birthday after all and my favorite way…

Banana Oatmeal Blender Pancakes with Berry Compote

Banana oatmeal blender pancakes with berry compote.  Surprisingly, these are the first pancakes I’m sharing on the blog. Not that I’ve been blogging for very long, but I somehow made it over a year and a half without sharing a pancake recipe. Believe me, these were worth the wait!  Honestly, I’m not much of a pancakes for breakfast kind of person. I have a rotation of 3 different breakfasts that I eat week after week and rarely do I crave something different. Yes, I basically wake up every morning craving oatmeal or toast. However, sometimes I do change things up, usually when it’s a special occasion. It may not be because I want a change, but mostly because I feel a change would be appropriate for special occasions. For example…

No-Knead Whole Wheat Seeded Bread

No-knead whole wheat seeded bread… The perfect recipe to make this snowy weekend. Yes, we just got another snow storm. The third one in 3 weeks and somehow they all fell on a Thursday. I’m just hoping this is the last of it – I can’t wait for the spring weather to finally arrive! For now though, I’ll just keep spending my weekends inside, staying cozy and baking. Maybe going for a hike in the snow. If your weekend is just as snowy (or maybe rainy), you need to make this bread. Not that you need an excuse to make fresh bread. Seriously though, if you’re scared of making homemade bread, this is the recipe for you. Honestly, I made homemade bread for the very first time last January. Before then, I…

Chocolate Coconut Oat Bars

These chocolate coconut oat bars are my idea of a perfect Valentine’s Day treat. Trust me, your weekend needs these bars, Valentine’s Day or not. Speaking of the weekend, I am so happy it’s Friday! It’s been a long week and I’m excited to finally get some time in the kitchen. Our last weekend was spent in Moncton as we were dog-sitting for my parents who were off to Montreal. My brother was competing in a track and field event, so all of my family was gone. For that reason, Shaun and I had the house to ourselves with Lola (our family dog). It felt so good to be back to our hometown for the weekend. We went to the Farmers’ Market, I went on a few walks with Lola and I…

The Healthiest Peanut Butter Hot Chocolate

Everyone is sharing healthy smoothie and salad recipes to start the New Year and I’m just here, sharing a peanut butter hot chocolate… One week into 2018.  This is not just any hot chocolate recipe though. This is the healthiest hot chocolate recipe (just go with it).  Why am I calling it the healthiest hot chocolate recipe? Well, because it doesn’t have any cream or sugar. Instead, it’s made with cashews, peanut butter, dates and cocoa. What could be healthier?!  (Okay, there is probably a “healthier” hot chocolate out there with special expensive ingredients, but I wanted a simple healthy drink that uses everyday ingredients). I made this recipe a few weeks ago, after walking home from work in -34°C weather (we’ve been experiencing very…
