Chai-Spiced Cut-Out Cookies

As I’m writing this, we’re having our first snow storm of the season. I think this recipe is perfect for the occasion! It would be a little more exciting if I could of stayed home and have a snow day, but it doesn’t work like that for my internship… I miss university! <— Here’s a sentence I never thought I’d say. 😉 Nevertheless, I braved the storm and arrived safely home after work. Now I’m warming up inside with a cup of coffee and a little Rudolph donut (you can get the recipe on my Instagram and Facebook page!). These cookies (and my donuts) were my project last weekend. I wanted to share Christmas desserts with you and I’m very happy with the results! For…

Dark Chocolate Mint Truffles

Happy Friday! Yes, I’m sharing a second recipe this week! I honestly don’t know how I managed to do so, but I’m happy to be sharing these healthy dark chocolate mint truffles with you today. 🙂 My goal is to share two recipes every week until Christmas, so lets see how that goes! Every minute of free time I have from my internship is spent either on this blog or on my workouts. Okay my workouts aren’t that long lately, but they still feel like a chore, which isn’t usually the case. It’s been like this since I started my internship and I don’t know how I’m able to do it. I admit that I try to take about one hour each day to do…

Vegetarian Lentil Pot Pie

I have a great Thanksgiving recipe for you guys! Okay, Thanksgiving is over in Canada, but this one is for my American friends… Or anyone who wants comfort food. There’s nothing stopping you from making this recipe any time of the year. Seriously, winter is coming, so any day could use some healthy comfort food. I honestly think that every recipe I posted on this blog until now is comfort food… Soups, veggie burgers, cookies, pie, pasta, oatmeal… That’s all comfort food to me! Shaun said that we have a different definition of comfort food… I’m sure that’s also true for some of you, but to me, it’s anything with carbs! I seriously have to share a salad recipe on this blog soon. How can I not have a salad recipe…

Spiced Root Vegetable Soup

Happy Monday! How was your weekend? We had a quiet weekend at home which was a nice change. Friday night, Shaun and I went for a small hike, then we had popcorn and wine while watching a movie. My idea of a perfect fall Friday night! Saturday, I stocked the fridge, did a bit of university work and baked some pumpkin cookies (the recipe is coming to the blog SO soon!). Finally, I spent most of Sunday cooking and cleaning. I love starting a new week with a clean house and a fridge full of prepared meals. I can certainly say that it was a productive weekend! I don’t always take the time on Sundays for meal prep, but now that I’m busy with my internship from Monday to Friday, the weekend is the only time…

Easy Date Caramel Pecan Pie

First it was Caramel & Coconut Latte Overnight Oats and now it’s a caramel pecan pie. Now you understand why I posted a date caramel tutorial? 😉 Seriously though, to me, fall is all about pumpkin and salted caramel. And soup. There’s nothing better than going on a hike when the leaves are changing and coming home to a comforting bowl of soup. Ah I love fall! I have so many recipes to share with you guys in the next few months! I just need to take the time and write the post which is not always easy. The internship is certainly taking up a lot of my time. Speaking of which, I can’t believe it’s already my fourth week of internship. This year will be gone before I know it! It&#8217…
