These chocolate coconut oat bars are my idea of a perfect Valentine’s Day treat. Trust me, your weekend needs these bars, Valentine’s Day or not. Speaking of the weekend, I am so happy it’s Friday! I found a way to use up all my apples this year. Date-Sweetened Apple Crumble Bars. I’m making these on repeat until I’m done with the 20lbs bag of apples we picked. I should start by saying that these apple crumble bars are not only sugar-free, but they’re also gluten-free, vegan and nut-free! Most importantly, they’re incredible (despite what you may think of something that’s gluten-free, vegan, nut-free and sugar-free). Seriously Addictive No-Bake Seedy Granola Bars

If I could eat only one thing for the rest of my life, I would choose these seriously addictive no-bake seedy granola bars. I can honestly make a batch of these bars and eat almost half of it throughout the day. One for a morning snack, one with lunch, one as an afternoon snack and one or two in the evening… Half of the batch, gone. Oups. Chewy Oatmeal Zucchini Cookies

It’s been a crazy week. We’re leaving for Gaspésie today after work and I still haven’t packed. I’m counting on the two hours I’ll have before leaving to pack everything and prepare our food for the trip. Lets see how that goes! I wanted to start earlier, but somehow, all of my evenings were packed this week. I spent a whole evening getting a new phone and dealing with the details at the store. Then yesterday I drove down to Moncton to see a childhood friend that’s moving to Ottawa today.
