No-bake walnut granola bars. A new granola bar recipe to my already extensive list of energy bites and bars. I can’t help it, they’re my all-time favorite snack/dessert. These walnut granola bars are simple and require only 6 ingredients (7 if drizzling with chocolate) and less than 15 minutes. There’s really no better granola bar than homemade. Plus, they’re so much healthier than the sugar-laden pre-packaged bars you find at the store. These walnut granola bars in particular are packed with fiber from dates, oats, nuts and seeds. These chocolate coconut oat bars are my idea of a perfect Valentine’s Day treat. Trust me, your weekend needs these bars, Valentine’s Day or not. Speaking of the weekend, I am so happy it’s Friday! I found a way to use up all my apples this year. Date-Sweetened Apple Crumble Bars. I’m making these on repeat until I’m done with the 20lbs bag of apples we picked. I should start by saying that these apple crumble bars are not only sugar-free, but they’re also gluten-free, vegan and nut-free! Most importantly, they’re incredible (despite what you may think of something that’s gluten-free, vegan, nut-free and sugar-free).
