Brownie Cookie Dough “Ice Cream” Bars

I waited long enough to share this recipe with you guys, but I think Easter is the perfect occasion. Not only is this Easter weekend, but it’s also my birthday weekend! It’s actually my 23rd birthday today, but since I’m working all day, I’ll be celebrating tomorrow. I think this week was the busiest week of my internship yet. First, it was a staff experience week, which means I took over the dietitian’s workload for the week. I was working in oncology, psychiatry and the HIV clinic all week. I also had to spend some time at night writing down a self-evaluation about my daily performance as part of my staff experience week. I then spent the rest of my evenings testing recipes for the blog, photographing recipes, editing…

Raw Salted Caramel Thumbprint Cookies

Is it really March already? I can’t believe how fast this year is going by and my internship certainly doesn’t help. Every 3-4 weeks, I’m working in a different department in the hospital, so I’m constantly busy and learning something new. Do you realize how fast 3 weeks goes by? The second I get comfortable in one rotation, it’s time to change to the next one! I’m currently spending 3 weeks in diabetes education, which is a whole different world from family medicine, burns and plastics. I’ll be spending my days listening/teaching classes for diabetics, doing one-on-one appointments and doing follow-ups. Anyway, that’s my little internship update. Now, for the month of March and April, I have to put…

Rudolph Nutella Donuts & Other Healthy Holiday Desserts

Happy Christmas Eve Eve! Here it is, a compilation of all my holiday desserts! I hope you find some inspiration for last-minute Christmas treats or even last-minute gifts?! Suggestion: fill a beautiful box with a loaf of pumpkin bread, truffles and cut-out cookies, then add a gift card for your friend/relative’s favorite restaurant! You could even add a copy of your favorite cookbook in there. It’s the ultimate foodie gift. Now enjoy these Christmas desserts, plus a new recipe at the end. 🙂 Easy Holiday Truffles I posted these truffles earlier this week and they’re the perfect addition to your holiday feast! They’re probably the healthiest and easiest truffles you’ll ever find. They’re made from only 3 ingredients, then rolled in beet powder, coconut flour…

Chai-Spiced Cut-Out Cookies

As I’m writing this, we’re having our first snow storm of the season. I think this recipe is perfect for the occasion! It would be a little more exciting if I could of stayed home and have a snow day, but it doesn’t work like that for my internship… I miss university! <— Here’s a sentence I never thought I’d say. 😉 Nevertheless, I braved the storm and arrived safely home after work. Now I’m warming up inside with a cup of coffee and a little Rudolph donut (you can get the recipe on my Instagram and Facebook page!). These cookies (and my donuts) were my project last weekend. I wanted to share Christmas desserts with you and I’m very happy with the results! For…

Hearty Oatmeal Breakfast Cookies

Now I know these aren’t exactly the kind of cookies you’re looking for during the holidays, but don’t turn them down just yet! It might be December, but we still have 3 weeks before Christmas, so it would probably be a good idea to continue eating healthy for a bit. That way, you can indulge in your favorite treats around Christmas without gaining an extra 10 pounds in December. So today I’m not sharing Dark Chocolate Mint Truffles (these will come later), but I’m sharing healthy breakfast cookies! Who doesn’t want cookies for breakfast!? These little cookies are packed with nutrients. One cookie contains healthy fats and 3 grams of protein and fiber, all under 112 calories. So it’s totally appropriate to eat 2 cookies, a…
