Sugar-Free Peanut Butter Freezer Fudge

Sugar-free peanut butter freezer fudge. Could there be anything better? The answer is no. Imagine a fudgy bite, perfectly sweetened with dates and lightly salty from the peanut butter. Then top that with melted chocolate for the most delicious chocolate peanut butter favor combination. It’s the ultimate sweet and salty dessert. While this recipe could be considered healthy (it doesn’t have any added sugar and it’s packed with protein and healthy fats from peanut butter), it is quite high in fat. No, not all fats are bad – some are an important part of a healthy diet – but I did use a small amount of cacao butter in this recipe, which gives it a bit of saturated fats. I’m not one to use cacao or coconut butter/oil, but in this recipe, it just works. The…

No-Bake Walnut Granola Bars

No-bake walnut granola bars. A new granola bar recipe to my already extensive list of energy bites and bars. I can’t help it, they’re my all-time favorite snack/dessert. These walnut granola bars are simple and require only 6 ingredients (7 if drizzling with chocolate) and less than 15 minutes. There’s really no better granola bar than homemade. Plus, they’re so much healthier than the sugar-laden pre-packaged bars you find at the store. These walnut granola bars in particular are packed with fiber from dates, oats, nuts and seeds. Also, they offer some omega-3s and protein for a balanced snack. It’s been a very long week around here. I’ve been in bed for 3 days fighting a bug that Shaun passed on to…

Pecan Pumpkin Spiced Date Bites

Pecan pumpkin spiced date bites. My kind of Halloween candy. And yes, these little energy bites really do taste like candy. They’re perfectly sweetened with dates and flavored with fall spices, including cinnamon, nutmeg, ginger and clove. These pumpkin spiced date bites are inspired by Nature’s Delight pumpkin spiced date rolls. Shaun and I first tried them while we were on Vancouver Island a few weeks ago. We were trying to find healthy snacks for our road trip and I stumbled onto these. As soon as I took that first bite, I knew I wanted to recreate a cheaper and equally delicious version in my kitchen. Especially considering that they’re a limited edition. This way, I get to enjoy them all year long if I want to. And I must say, they taste very…

Fruit-Sweetened Apple Muffins

Fruit-Sweetened Apple Muffins. Canadian Thanksgiving is just around the corner and for those of you who are looking for recipes to make this weekend, I’ve got a great healthy dessert for you. Or snack. Or breakfast. These apple muffins can pass for all three. It may be Thanksgiving in Canada this weekend, but this is an everyday recipe that I hope you’ll love. Healthy whole wheat muffins sweetened with bananas and apples. While I did call them apple muffins, they do have a banana bread flavor to them. Either way, they’re delicious! One bowl and 30 minutes is all you need to get muffins all week. Similarly to my banana bread, I recommend serving these with nut or seed butter. Maybe some apple butter too… I need to try this as soon as possible…
