Fruit-Sweetened Apple Muffins. Canadian Thanksgiving is just around the corner and for those of you who are looking for recipes to make this weekend, I’ve got a great healthy dessert for you. Or snack. Or breakfast. These apple muffins can pass for all three. It may be Thanksgiving in Canada this weekend, but this is an everyday recipe that I hope you’ll love. Healthy whole wheat muffins sweetened with bananas and apples. While I did call them apple muffins, they do have a banana bread flavor to them. Either way, they’re delicious! One bowl and 30 minutes is all you need to get muffins all week. Similarly to my banana bread, I recommend serving these with nut or seed butter. Maybe some apple butter too… I need to try this as soon as possible…

The best vegan chickpea-nut butter ice cream cake. See what I did there? I combined chickpea and peanut butter to make chick(pea-nut). Yes, that means there is in fact chickpeas in this dessert. And no, you can’t taste them. They’re simply there for nutrition and texture. Trust me, it just works. This recipe takes one of my favorite recipes from the blog: My chickpea-nut butter ice cream. When I shared this recipe earlier this summer, I got some great feedback from you guys. Many of you made it and absolutely loved it! Ending the week with a delicious no-bake cherry yogurt tart. My parents are actually in Vernon for the weekend. They drove all the way from New Brunswick to British Columbia to bring Shaun’s car (plus they got to enjoy a trip across Canada, just like we did!) and I must say, it’s nice to see familiar faces in Vernon.
