Healthy Peanut Butter Crunch Balls

I would have shared these healthy peanut butter crunch balls with you sooner, but the truth is, I didn’t have any photos to go with the recipe. That’s the problem with being a food photographer and working full time at another job. You don’t get enough light to take pictures during the week. I developed the recipe earlier this week and I knew I wanted to share it with you guys for the holidays. I know I’m last minute, but at least I got to share the recipe before Christmas! Just before driving home to see our family. And before the freezing rain starts… We’re expecting two storms over the weekend, including 20-30 cm of snow on Christmas day. I guess we’ll have a white Christmas after all! I know…

Pumpkin Cupcakes with Chai Cream Cheese Frosting

Today, I’m happy to be sharing a delicious holiday treat:  Pumpkin cupcakes with chai cream cheese frosting. Yes, I said CHAI cream cheese frosting. Here’s the thing. Most of the recipes you’ll find here are vegan/vegetarian, sweetened with fruit and made from unprocessed food. Sometimes though, we need to treat ourselves a bit. For that reason, I decided to make us a little treat for the holidays. Don’t get me wrong, these pumpkin cupcakes are still far healthier than most cupcake recipes you’ll find out there. The cupcake itself is not only made with whole wheat flour, but it’s also sweetened with dates. You’ll also find some healthy fats, pumpkin puree and of course, an abundance of pumpkin spice. This results in a moist…

Date-Sweetened Apple Crumble Bars

I found a way to use up all my apples this year. Date-Sweetened Apple Crumble Bars. I’m making these on repeat until I’m done with the 20lbs bag of apples we picked. I should start by saying that these apple crumble bars are not only sugar-free, but they’re also gluten-free, vegan and nut-free! Most importantly, they’re incredible (despite what you may think of something that’s gluten-free, vegan, nut-free and sugar-free). To be honest, Shaun and I ate 2/3 of the recipe over the first day I made it. It’s another one of those addictive dessert recipes. If I learned something since I stopped eating sugar, it’s that you can still make sweet, addictive recipes sweetened with fruit. Of…

Spiced Chia Applesauce

This spiced chia applesauce is part one of a recipe I’m really excited to share with you guys this week! It may be part of another recipe, but I wanted to share it on its own, since it’s perfectly delicious eaten as is. I’ll even say that it’s the best applesauce I’ve ever had (honestly). And this Friday, I’m sharing a delicious apple dessert recipe that uses it.  My fridge is currently full of applesauce from the many batches I tested over the weekend. I have to say, it was a good way to use up my 20lbs bag of apples – If you’re looking for more sugar-free apple recipes, I also love my sugar-free apple crisp and healthy caramel apple slices. Like…

Healthy Caramel Peanut Butter Apple Slices

We went apple picking last weekend and I’m finally sharing my first apple recipe of the season: Healthy Caramel Peanut Butter Apple Slices. Things have been busier than ever over here. Not only am I studying for my dietetic exam that’s coming up this November, but I also started my new full time position at the hospital, which obviously takes up all of my time during the week. I absolutely love working in diabetes education, but training is always stressful and I can’t wait to feel a little more settled and comfortable in my new position. On top of that, we finally started wedding planning (!!!), which doesn’t leave much time to work on the blog and even less time to relax.  When I say wedding planning, I mean pinning a bunch…
