Whole Wheat Vegan Biscuits

Healthier whole wheat vegan biscuits, perfect for holiday entertaining! Biscuits always had their part in all of our big family dinners. More specifically, growing up, my grandmother would always make us homemade biscuits to have as a snack or as a dessert in a strawberry shortcake. Strawberry shortcakes were our favorite, especially served with ice cream. Now I wanted to create a healthier version to our traditional white flour biscuits. My version is made vegan and a little heartier (but still so good) with whole wheat flour. If you’re not into whole wheat flour, don’t worry, you can easily sub the flour for all-purpose white flour! To make this recipe vegan, I used vegan margarine/butter and I replaced buttermilk with my own mix of almond milk and apple cider vinegar. Again, you can substitute…

Vegan Chickpea-Nut Butter Ice Cream Cake

The best vegan chickpea-nut butter ice cream cake. See what I did there? I combined chickpea and peanut butter to make chick(pea-nut). Yes, that means there is in fact chickpeas in this dessert. And no, you can’t taste them. They’re simply there for nutrition and texture. Trust me, it just works. This recipe takes one of my favorite recipes from the blog: My chickpea-nut butter ice cream. When I shared this recipe earlier this summer, I got some great feedback from you guys. Many of you made it and absolutely loved it! I even heard from someone who made it and her grandmother said it tasted just like regular peanut butter ice cream. That’s my goal. Making healthier desserts that don’t taste healthy. My job is done here…

No-Bake Cherry Yogurt Tart

Ending the week with a delicious no-bake cherry yogurt tart. My parents are actually in Vernon for the weekend. They drove all the way from New Brunswick to British Columbia to bring Shaun’s car (plus they got to enjoy a trip across Canada, just like we did!) and I must say, it’s nice to see familiar faces in Vernon. Moving to a new city can feel lonely at times, despite being introverted and enjoying being alone most of the time. Going to work at the hospital 4 days a week is more than enough socialization for me… Hah! Plus I have Shaun to keep me company and we get to explore British Columbia together, which is more than I could ask for. It doesn’t stop me from missing my friends and family though. So…

5-Ingredient Cookie Dough Bites

5-ingredient cookie dough bites. Made in under 10 minutes in a food processor and filled with wholesome ingredients. What could be better?! Seriously though, cookie dough will forever be my favorite flavor when it comes to snacks and desserts. Ice cream, granola bars, energy bites… Anything. Even better when it’s simple and healthy, which is all you’ll see on the blog over the next few weeks. Did you read my last post? The news is out, Shaun and I are moving to British Columbia! We’re moving to the other side of the country in less than 3 weeks. Not to mention that we’re planning a road trip across Canada to get there. I think it’s safe to say that we’re crazy busy. Packing all of our…

Roasted Potato Pesto Salad with Spicy Chipotle Chickpeas

Roasted potato pesto salad with spicy chipotle chickpeas. Another delicious vegan recipe for you guys! I’m almost halfway through my vegan month and to be honest, it doesn’t feel different from my usual diet. That doesn’t mean it’s not a bit challenging at times. The most challenging change for me was to omit the milk in my coffee. While I don’t usually drink cow’s milk anyways (personal preference and a slight intolerance), I do add a touch of whole milk in my coffee every morning. Almond milk, coconut milk and soy milk are not the same. Nope. I just can’t tolerate the taste in coffee. So far, I’ve been using cashew milk, which tastes the best in coffee in my opinion. Vegan creamers would…
