Sugar-Free Peanut Butter Freezer Fudge

Sugar-free peanut butter freezer fudge. Could there be anything better? The answer is no. Imagine a fudgy bite, perfectly sweetened with dates and lightly salty from the peanut butter. Then top that with melted chocolate for the most delicious chocolate peanut butter favor combination. It’s the ultimate sweet and salty dessert. While this recipe could be considered healthy (it doesn’t have any added sugar and it’s packed with protein and healthy fats from peanut butter), it is quite high in fat. No, not all fats are bad – some are an important part of a healthy diet – but I did use a small amount of cacao butter in this recipe, which gives it a bit of saturated fats. I’m not one to use cacao or coconut butter/oil, but in this recipe, it just works. The…

Vegan Chickpea-Nut Butter Ice Cream Cake

The best vegan chickpea-nut butter ice cream cake. See what I did there? I combined chickpea and peanut butter to make chick(pea-nut). Yes, that means there is in fact chickpeas in this dessert. And no, you can’t taste them. They’re simply there for nutrition and texture. Trust me, it just works. This recipe takes one of my favorite recipes from the blog: My chickpea-nut butter ice cream. When I shared this recipe earlier this summer, I got some great feedback from you guys. Many of you made it and absolutely loved it! I even heard from someone who made it and her grandmother said it tasted just like regular peanut butter ice cream. That’s my goal. Making healthier desserts that don’t taste healthy. My job is done here…

Chickpea-Nut Butter Ice Cream

Chickpea-Nut Butter Ice Cream: Ice cream that’s made with chickpeas, plant-based milk, dates and peanut butter. So basically, a frozen dessert that’s high in fiber, healthy fats, protein (depending on the milk you use) and sweetened with fruit. To be honest, I kept this recipe from you guys since Christmas. I know, so selfish! In my defense, ice cream didn’t feel like an appropriate recipe to share during winter. Especially not with the cold weather we had in December and January. So why did I even make this recipe in December in the first place? Well, because it was supposed to be freezer fudge. Turns out, it had a texture similar to ice cream… I’m not mad about that at all. The other reason I kept this recipe hidden for…

Peanut Butter Strawberry Swirl Nice Cream with Cookie Dough Crumble

I’m finally sharing the recipe for my peanut butter strawberry swirl nice cream with cookie dough crumble! I shared a picture on Instagram last week and many of you have been asking for the recipe since then. Well, here it is! I meant to share it yesterday, but I got sick and spent Friday and Saturday in bed… I hadn’t felt horrible like that in a long time. I’m not even sure what it was, but all I know is that I couldn’t stand up without my head spinning and feeling like I was going to pass out. I’m feeling better today (thankfully!) and I’m finally ready to share this nice cream recipe with you guys! I know that I’m sharing yet another strawberry recipe…

Brownie Cookie Dough “Ice Cream” Bars

I waited long enough to share this recipe with you guys, but I think Easter is the perfect occasion. Not only is this Easter weekend, but it’s also my birthday weekend! It’s actually my 23rd birthday today, but since I’m working all day, I’ll be celebrating tomorrow. I think this week was the busiest week of my internship yet. First, it was a staff experience week, which means I took over the dietitian’s workload for the week. I was working in oncology, psychiatry and the HIV clinic all week. I also had to spend some time at night writing down a self-evaluation about my daily performance as part of my staff experience week. I then spent the rest of my evenings testing recipes for the blog, photographing recipes, editing…
