Pink Berry Lime Smoothie

If it’s as cold where you live as it is here in Canada, I’m sure the last thing you want is a smoothie. Believe me though, this berry lime smoothie is worth freezing for. If you’re like me and you sometimes crave a smoothie during winter, just make yourself cozy in a pile of blankets (maybe next to a fire place) and enjoy it. This smoothie is the result of a mid-winter smoothie craving and tons ripe avocados that desperately needed to be used. Honestly, I’m not sure why I keep buying avocados from Costco. They’re much cheaper, but I always end up with either 6 hard avocados or 6 overly ripe avocados at the same time. Perfectly ripe avocados, ready to use when you want them. That&#8217…

Sugar-Free Peanut Butter Freezer Fudge

Sugar-free peanut butter freezer fudge. Could there be anything better? The answer is no. Imagine a fudgy bite, perfectly sweetened with dates and lightly salty from the peanut butter. Then top that with melted chocolate for the most delicious chocolate peanut butter favor combination. It’s the ultimate sweet and salty dessert. While this recipe could be considered healthy (it doesn’t have any added sugar and it’s packed with protein and healthy fats from peanut butter), it is quite high in fat. No, not all fats are bad – some are an important part of a healthy diet – but I did use a small amount of cacao butter in this recipe, which gives it a bit of saturated fats. I’m not one to use cacao or coconut butter/oil, but in this recipe, it just works. The…

Instant Pot Cinnamon Roll Steel-Cut Oatmeal

Instant pot cinnamon roll steel-cut oatmeal. A delicious, holiday-inspired bowl of oatmeal, made easier in the Instant Pot. In one week tomorrow, it’s Christmas day. Also, in one week tomorrow, Shaun and I are leaving for California for 2 weeks. To say that I’m excited is an understatement. We did all the Christmas things already, knowing that we’d be gone for Christmas, but there’s still something special about that day. I’m planning on listening to Christmas music in the car all day, whether Shaun likes it or not. Hah! That’s 9 hours in the car to be exact, from Vernon to Portland, Oregon. It’s still one week away though, and until then, I’m working all week at the hospital and I’ll be working on some blog content for the…

Whole Wheat Vegan Biscuits

Healthier whole wheat vegan biscuits, perfect for holiday entertaining! Biscuits always had their part in all of our big family dinners. More specifically, growing up, my grandmother would always make us homemade biscuits to have as a snack or as a dessert in a strawberry shortcake. Strawberry shortcakes were our favorite, especially served with ice cream. Now I wanted to create a healthier version to our traditional white flour biscuits. My version is made vegan and a little heartier (but still so good) with whole wheat flour. If you’re not into whole wheat flour, don’t worry, you can easily sub the flour for all-purpose white flour! To make this recipe vegan, I used vegan margarine/butter and I replaced buttermilk with my own mix of almond milk and apple cider vinegar. Again, you can substitute…

Roasted Brussels Sprouts with Garlic Pecans

Roasted Brussels sprouts with garlic pecans. The most addictive holiday side dish. I don’t know about you, but brussels sprouts are one of my favorite vegetables. In my opinion, they’re seriously underrated. Steamed they’re okay, but roasted? I could eat the whole pan. I think that’s the key if you don’t like vegetables. Try them roasted and it will change your mind. These brussels sprouts aren’t only roasted, but they’re also topped with toasted salty and garlicky pecans. Those pecans are what takes these brussels sprouts to the next level. It’s what makes them even better for your holiday feast. Trust me. I first used these toasted pecans in this savory sweet potato casserole last year. I loved it so much that this year…
