A New Adventure

I don’t even know how to start this post. There’s so much that has been going on behind the scenes lately and it’s time that I share the news with you. Here goes… We’re moving to British Columbia! Let me explain: A little under a week ago, I accepted a position in British Columbia. The complete opposite side of the country. A big 52 hour drive away from the place where I was born. Me, a girl who never moved more than an hour and a half away from my family. I’ve been dreaming of living out West all my life and it’s finally happening. Honestly, it still doesn’t feel real. In less than 3 weeks, Shaun and I are leaving for our biggest adventure…

My Vegan Month Experience

May is gone already and with that, I’m done with my vegan month. I thought I’d share my vegan month experience with you guys, including what I loved, what was challenging and my future plans. All in all, last month was a positive experience. I didn’t have many challenges throughout the month and to be honest, it wasn’t so far from my regular diet. To clear things up, I basically eat a vegetarian diet 99% of the time, which includes a bit of yogurt, cheese, eggs and a rare bite of fish or poultry. The only thing I don’t eat is red meat, which is a decision I made over 7 years ago. So, looking back on my vegan diet over the past month, I can truly say that I enjoyed it. I…

What I Eat in a Day (Vegan)

I’m back for another what I eat in a day post, but this time, it’s vegan! If you’ve been following this blog over the past month, you may know that I’m doing a vegan month for May. For that reason, I thought it would be a good occasion to show you what I’ve been eating in a day. A vegan diet can be challenging at times and it certainly requires a bit of planning. If you’re not familiar with a vegan diet, it can be difficult to get all the required nutrients. You do need to pay a bit more attention to vitamin D, vitamin B12, calcium, iron and protein. That’s not to say that a vegan diet can’t be nutritionally adequate. It certainly can! My hope is that this post gives…

May Favorites (2018)

I’m taking a break from recipes today and I’m sharing my May favorites! The weather is finally getting warmer here and I’m getting ready to go on a little backpacking trip with my friend this weekend. We did this trail several times together, but it’s been about 3 years since our last overnight hiking trip… How does the time go by so fast?! I’m excited to be in nature for several days, away from my to-do list. I mentioned to someone at work that I was doing this, to which she responded: There must be an easier way to have fun? Hah! It’s true, but nothing is quite as rewarding as hiking 40km with a 30lbs bag on your back, sleeping in the woods, preparing your…

Vegan for One Month

I’m going vegan for one month. When I said that to my family, friends and coworkers, they all had the same reaction: Aren’t you vegan already? Well no, not really. I eat a vegetarian diet 99% of the time, that’s true, but I’m not vegan. I do eat eggs, cheese and yogurt. So why am I going vegan for one month? While I love cheese and yogurt, I’m starting to think that it doesn’t like me. More specifically, I’m starting to think that dairy is worsening my acne. It’s just a theory, but I want to test it out. Okay, my acne is not (usually) horrible, but it’s bad enough that it makes me self-conscious and uncomfortable at times. For that reason, I think it’s worth the…
