21 Ways to Eat More Vegetables

Is one of your goals this year to eat more vegetables? You’re not alone. I love vegetables, but I would be lying if I said I reach the recommended serving size every single day. Yes, I do reach that number most days, but not always. So today, I wanted to share some tips on how to sneak in some vegetables to your diet. Because let’s be real, most of us could eat a bit more vegetables. How many servings should you really be eating each day? The recommendation is a minimum of 5 portions. To be clear, this doesn’t mean 5 big salads or 5 large piles of vegetables on your plate. One serving is actually relatively small. How small exactly? Half a cup for cooked or raw vegetables or 1 cup for leafy greens…

Our 12 Day West Coast Road Trip

We’re back from our West Coast road trip and I’m excited to share the details with you! You may have been following along on Instagram Stories, but we left for the US on Christmas day and we just got back last Saturday. It was an amazing and exhausting trip and as much as I enjoyed (almost) every minute of it, I’m so happy to be back home, in my own bed, cooking in my own kitchen. This is a long post, but that’s what happens when you do so much in 12 days. So if you’re not up for reading the highlights of our adventure, feel free to just enjoy the photos. That’s the best part, really? Just imagine Shaun and I in our car, eating Lara Bars and singing along to Disney music…

December Coffee Break

One last coffee break before the New Year. As I’m writing this, Shaun and I are in San Francisco. We left on Christmas day for our road trip across the West coast. So far, we’ve been to Portland and Crescent City and we’ve driven across the redwood parks here in California. I’ll share my favorite photos on the blog once we’re back home, but so far, this trip has been busy and absolutely wonderful. We’ll be driving along the California coast for the next few days and I couldn’t think of a better way to end 2018. Now let’s move on to our December coffee break! Reflecting on 2018 2018 was a big year. It was my first full year working as a dietitian, we…

November Coffee Break

I’m here for another coffee break post! In a way, it feels like forever since I last wrote a coffee break post, but then again, November just flew by. How is it December tomorrow already?! For this coffee break post, I don’t have a new recipe, but I can share what I’ve been drinking a lot of lately: My peppermint mocha of course. I’m drinking one as I’m writing this. I can’t get enough of this cozy drink this time of year. If you haven’t tried it already, you need to make it. Trust me, it’s life-changing. I also finished off a new batch of vegan cashew eggnog and I’m planning on making another one this weekend. Another must-try recipe this holiday season. What’s your go-to drink…
