Hearty Oatmeal Breakfast Cookies

Now I know these aren’t exactly the kind of cookies you’re looking for during the holidays, but don’t turn them down just yet! It might be December, but we still have 3 weeks before Christmas, so it would probably be a good idea to continue eating healthy for a bit. That way, you can indulge in your favorite treats around Christmas without gaining an extra 10 pounds in December. So today I’m not sharing Dark Chocolate Mint Truffles (these will come later), but I’m sharing healthy breakfast cookies! Who doesn’t want cookies for breakfast!? These little cookies are packed with nutrients. One cookie contains healthy fats and 3 grams of protein and fiber, all under 112 calories. So it’s totally appropriate to eat 2 cookies, a…

Caramel & Coconut Latte Overnight Oats

Here I am, writing on a Saturday again! This internship is certainly keeping me busy during the week. I woke up at 4:45 in the morning for the last few days (including this Saturday!) for a big catering event. Yup, I’ll enjoy sleeping in tomorrow… By that, I mean waking up at 7 am without an alarm. The problem with being a morning person! Other than the lack of sleep, I’m really enjoying my experience so far! I’m starting my internship with 11 weeks of food service management in the hospital. Then, I’m doing 18 weeks of clinical nutrition. During those weeks, I’ll be doing many different rotations, including diabetes, tube feeding, rehab, renal, neurology, cardiac, plastic surgery, burns, pediatrics, obstetrics (I’m so excited for this…

Peanut Butter & Chia Jam Overnight Oats

This week, I’m eating as much peanut butter as I possibly can. It’s our last week in Moncton before moving to our new apartment in Saint John! Since our roommate is allergic to peanuts and we won’t be able to eat some for a year, I made all the peanut butter recipes I could in the last few weeks. I saved a few of them, which I’m planning to share with you guys later this summer, but today I’m sharing one of my favorites!   It’s a twist on my all time favorite breakfast: Peanut butter Banana Oatmeal. I can’t get enough!!! In this heat wave though, I must admit that hot oatmeal doesn’t seem too attractive… That’s when I turn…

My Classic Peanut Butter Banana Oatmeal

This wasn’t supposed to be today’s blog post, but I got too busy with work to test the other recipe one last time so it will have to wait until tomorrow! The struggle of working full time and blogging on the side. Thankfully, I had this recipe ready for tomorrow, so here it is, one day early! I have been eating oatmeal for breakfast for over 6 years now. In the beginning, it was those sugar laden bags of Quaker oats, but a lot has changed since then, including my obsession for peanut butter and the fact that I quit sugar. Now I make my own oatmeal flavors. I like to change the toppings once in a while, but the base is almost always the same: peanut butter and banana. It’s a match made in…
