Pink Berry Lime Smoothie

If it’s as cold where you live as it is here in Canada, I’m sure the last thing you want is a smoothie. Believe me though, this berry lime smoothie is worth freezing for. If you’re like me and you sometimes crave a smoothie during winter, just make yourself cozy in a pile of blankets (maybe next to a fire place) and enjoy it. This smoothie is the result of a mid-winter smoothie craving and tons ripe avocados that desperately needed to be used. Honestly, I’m not sure why I keep buying avocados from Costco. They’re much cheaper, but I always end up with either 6 hard avocados or 6 overly ripe avocados at the same time. Perfectly ripe avocados, ready to use when you want them. That&#8217…

3-Ingredient Vegan Parmesan Cheese

3-Ingredient vegan parmesan cheese. Starting the week with another favorite kitchen staple. I’ve been busy in the kitchen all weekend and I finally feel like I caught up on work since I got back from California a few weeks back. I tested and photographed many recipes, including some for my new eBook (more on that here!). It was a productive weekend filled with delicious food. Speaking of the weekend, did you make anything good for the Super Bowl? I don’t exactly watch football, but I do like the idea of hosting a small party with friends and eating good food.  Of course, I like anything that involves food. Back to this vegan parmesan. I’ve been keeping a batch of this parmesan in the fridge at all times lately and it’s become…

How to Cook Steel-Cut Oats in the Instant Pot

My favorite way to cook steel-cut oats: In the Instant Pot. Guys, I recently started making steel-cut oatmeal in the Instant pot and it’s life-changing. I know it sounds a bit extreme, but the reality is, it makes it possible to eat steel-cut oats during the week. Cooking steel cut oats on the stove top does take more time than rolled oats, which is why I don’t cook them often. While the difference is minimal (about 10 minutes), it can make a difference on a busy morning. By using the Instant pot, you eliminate the need to stand next to the pot and stir. All you do is mix all the ingredients together, set it to cook and leave it until it’s done. That means you can prepare it, get ready for the…

Vegan Cashew Eggnog (Sugar-Free)

I hope you’re starting to get in the holiday spirit because I have a delicious vegan cashew eggnog for you guys today! Where do you stand on traditional eggnog? Do you like it or not? Growing up, I was obsessed with it and so was my whole family. As soon as eggnog would come out at the store, my mom would buy a few cartons and we’d go through all of it within days. We were all eggnog lovers. It’s only later that I realized that not everyone is as obsessed with this sweet milk as we are. Some say it’s sickeningly sweet. I didn’t understand them… Until now. I will admit, it’s been 4 years since I’ve had eggnog (since I stopped eating added…

No-Bake Walnut Granola Bars

No-bake walnut granola bars. A new granola bar recipe to my already extensive list of energy bites and bars. I can’t help it, they’re my all-time favorite snack/dessert. These walnut granola bars are simple and require only 6 ingredients (7 if drizzling with chocolate) and less than 15 minutes. There’s really no better granola bar than homemade. Plus, they’re so much healthier than the sugar-laden pre-packaged bars you find at the store. These walnut granola bars in particular are packed with fiber from dates, oats, nuts and seeds. Also, they offer some omega-3s and protein for a balanced snack. It’s been a very long week around here. I’ve been in bed for 3 days fighting a bug that Shaun passed on to…
