Slow Cooker Vegetarian Pumpkin Chili

Slow cooker vegetarian pumpkin chili. Slow cooked for maximum flavor and made vegetarian and high-protein thanks to a combination of red lentils and black beans. This pumpkin chili has been a fall favorite around here for the past two years and I hope you’ll love it too. This is actually my first time sharing a slow cooker recipe on the blog and I have no excuse for it. Since I moved in with Shaun 4 years ago and he brought with him an old slow cooker, I’ve used it exactly 3 times. Two of those times being this week. The other time was 2 years ago when I made Half Baked Harvest’s Moroccan soup. I’m not sure how it’s been 2 years already, but it has. Two years ago, I was starting my dietetic…

Sugar-Free Pumpkin Spice Latte

Welcoming the first week of fall with the healthiest sugar-free pumpkin spice latte. When I think of a cozy fall drink, I immediately think of the pumpkin spice latte… Not because I drink it each year (I drank it a few times before I stopped eating added sugar), but because as soon as September arrives, pumpkin spice lattes are everywhere. The thing is though, they’re typically loaded with sugar, which is why I needed to find a way to make mine at home. So that’s what I did. As I discovered last year, you can blend cashews and coffee together to make the most delicious and creamy drink. Since then, I’ve been experimenting with many cozy drinks, including peanut butter hot chocolate, chai latte, peppermint mocha and mint matcha latte. Now I…

Date-Sweetened Chai Granola

Date-sweetened chai granola. Utterly addictive, perfectly sweetened with dates and nut-free. This. Is. The. Best. Granola. I’m here to share this granola with you today after an unintentional two weeks away from the blog. Unintentional as in I didn’t expect (nor did I want) to be sick with a wicked cold over the past few weeks. I spent the past 2 weeks on the couch, watching Netflix. Going to work just to come home and crash on the bed for the night. Needless to say, recipe development and photography weren’t the first things on my mind. Now I’m playing catch up with blog content. I worked in the kitchen all weekend and I’m now ready to start sharing some fall recipes, starting with this chai granola! This granola…

Hydrating Super Green Smoothie

Over the past year, I got 3 bad colds where I lost my voice for days. This is when I created this hydrating super green smoothie. That last cold happened in the same week we learned we were moving to British Columbia. I had 2 interviews and needed to work and prepare for our move. Needless to say I was a bit desperate to get my voice back at that point. Perfect timing, right? That week, I was drinking this smoothie daily. A smoothie I had created earlier that year when I had lost my voice the first time (the same week Shaun proposed – I really choose the best times!). My goal was mostly to stay hydrated (which I hoped would help with my dry, irritated throat) and to get in some fruits and vegetables. No fancy “superfood” powders…

Cherry Coconut Overnight Oats

Cherry coconut overnight oats. Easy, creamy, nutritious and filled with all my favorite flavors. As I’m writing this, I’m sitting in our living room, darkened from the clouds and smoke outside. It’s 8:30 am outside, yet it still looks like 5 am. Today marks one week since the smoke invaded the Okanagan and there’s no sign of it going away any time soon. I’m sitting on our couch, the windows opened, deciding that the (finally) cold air from outside is worth the smell of smoke for one morning. The temperatures dropped to the low twenties this weekend after weeks of 30s and 40s. Our apartment has been closed up all week due to that heat and smoke, so I’m choosing to let the cool air come in…
