Whole Wheat Apple Zucchini Cake with Cream Cheese Frosting

Whole wheat apple zucchini cake with cream cheese frosting. A delicious cake filled with all the best produce in season. Plus, it’s sweetened with fruit and high in fiber. What could be better?! Who else is excited for fall and all the cozy recipes to come? I sure am! I said it many times before, but fall is by far my favorite season and I’m so happy to be entering the colder, cozier months. Summer was great and all, but I can’t stand the heat (and the smoke we had this particular summer). Anything over 25°C and all I want to do is stay inside in the air conditioning or spend my day in a pool. Anyone else like that? I know I’m a bit strange, but to me, perfect weather means you can comfortably…

Vegan Chickpea-Nut Butter Ice Cream Cake

The best vegan chickpea-nut butter ice cream cake. See what I did there? I combined chickpea and peanut butter to make chick(pea-nut). Yes, that means there is in fact chickpeas in this dessert. And no, you can’t taste them. They’re simply there for nutrition and texture. Trust me, it just works. This recipe takes one of my favorite recipes from the blog: My chickpea-nut butter ice cream. When I shared this recipe earlier this summer, I got some great feedback from you guys. Many of you made it and absolutely loved it! I even heard from someone who made it and her grandmother said it tasted just like regular peanut butter ice cream. That’s my goal. Making healthier desserts that don’t taste healthy. My job is done here…

No-Bake Cherry Yogurt Tart

Ending the week with a delicious no-bake cherry yogurt tart. My parents are actually in Vernon for the weekend. They drove all the way from New Brunswick to British Columbia to bring Shaun’s car (plus they got to enjoy a trip across Canada, just like we did!) and I must say, it’s nice to see familiar faces in Vernon. Moving to a new city can feel lonely at times, despite being introverted and enjoying being alone most of the time. Going to work at the hospital 4 days a week is more than enough socialization for me… Hah! Plus I have Shaun to keep me company and we get to explore British Columbia together, which is more than I could ask for. It doesn’t stop me from missing my friends and family though. So…

Spiced Banana Cake with Cream Cheese Frosting

April is a month full of celebrations for us, so it only made sense that I shared my favorite cake recipe: This spiced banana cake with cream cheese frosting. This recipe is inspired by Snixy Kitchen’s banana date cake, which I made for the first time last April. I haven’t stopped thinking about it since. Since today is my 24th birthday (where does the time go?!), I knew I had to make this cake again – with a few modifications to make it fruit-sweetened. I also made it for Shaun’s birthday (and Easter) on April 1st. Then I made it again last weekend to photograph and to adjust the recipe as needed. Finally, I’m making it one more time this weekend for myself. I mean, it’s my birthday after all and my favorite way…

Pumpkin Cupcakes with Chai Cream Cheese Frosting

Today, I’m happy to be sharing a delicious holiday treat:  Pumpkin cupcakes with chai cream cheese frosting. Yes, I said CHAI cream cheese frosting. Here’s the thing. Most of the recipes you’ll find here are vegan/vegetarian, sweetened with fruit and made from unprocessed food. Sometimes though, we need to treat ourselves a bit. For that reason, I decided to make us a little treat for the holidays. Don’t get me wrong, these pumpkin cupcakes are still far healthier than most cupcake recipes you’ll find out there. The cupcake itself is not only made with whole wheat flour, but it’s also sweetened with dates. You’ll also find some healthy fats, pumpkin puree and of course, an abundance of pumpkin spice. This results in a moist and…
