Ending the week with a delicious no-bake cherry yogurt tart. My parents are actually in Vernon for the weekend. They drove all the way from New Brunswick to British Columbia to bring Shaun’s car (plus they got to enjoy a trip across Canada, just like we did!) and I must say, it’s nice to see familiar faces in Vernon. We’re on day 3 of our road trip from New Brunswick to British Columbia. The biggest road trip we’ve ever done, twelve days on the road. As I’m finishing this post, I’m in a small Air BnB in Ottawa after a great Canada Day yesterday in our capital city. During our road trip, we’re doing a mix of camping in National and Provincial parks and sleeping in Air BnB’s in a few big cities. Since we’re passing through large cities, it makes it easy for us to stop and buy food as needed, but I do like to bring as much as we can from home to save money. Celebrating the first day of spring with these chocolate chunk protein bars. I know these don’t necessarily scream spring, but I would honestly eat them every day of the year. That, and the salad I wanted to share with you guys today needed a bit more work, so I’m sharing these instead. The thing is, granola bars are my favorite thing to create.
