Pink Berry Lime Smoothie

If it’s as cold where you live as it is here in Canada, I’m sure the last thing you want is a smoothie. Believe me though, this berry lime smoothie is worth freezing for. If you’re like me and you sometimes crave a smoothie during winter, just make yourself cozy in a pile of blankets (maybe next to a fire place) and enjoy it. This smoothie is the result of a mid-winter smoothie craving and tons ripe avocados that desperately needed to be used. Honestly, I’m not sure why I keep buying avocados from Costco. They’re much cheaper, but I always end up with either 6 hard avocados or 6 overly ripe avocados at the same time. Perfectly ripe avocados, ready to use when you want them. That&#8217…

Classic Lemon Garlic Hummus

Going back to the basics with my go-to classic lemon garlic hummus. I’m sure I’m not the only one, but hummus is something I often make without measuring. I just throw a can of chickpeas in the food processor, along with lemon juice, oil, salt and a generous amount of tahini. Well, after years of imprecise hummus-making, I finally decided to write down my own recipe. Everyone has different preferences when it comes to hummus (I tried some versions that I didn’t care for in the past), but this is my favorite. Lots of flavor, lower in salt and more tahini. The internet may be filled with homemade hummus recipes, but I wanted to share my version, partly because I can then refer to this recipe whenever I use hummus in another recipe. One of…

Whole Wheat Vegan Biscuits

Healthier whole wheat vegan biscuits, perfect for holiday entertaining! Biscuits always had their part in all of our big family dinners. More specifically, growing up, my grandmother would always make us homemade biscuits to have as a snack or as a dessert in a strawberry shortcake. Strawberry shortcakes were our favorite, especially served with ice cream. Now I wanted to create a healthier version to our traditional white flour biscuits. My version is made vegan and a little heartier (but still so good) with whole wheat flour. If you’re not into whole wheat flour, don’t worry, you can easily sub the flour for all-purpose white flour! To make this recipe vegan, I used vegan margarine/butter and I replaced buttermilk with my own mix of almond milk and apple cider vinegar. Again, you can substitute…

No-Bake Walnut Granola Bars

No-bake walnut granola bars. A new granola bar recipe to my already extensive list of energy bites and bars. I can’t help it, they’re my all-time favorite snack/dessert. These walnut granola bars are simple and require only 6 ingredients (7 if drizzling with chocolate) and less than 15 minutes. There’s really no better granola bar than homemade. Plus, they’re so much healthier than the sugar-laden pre-packaged bars you find at the store. These walnut granola bars in particular are packed with fiber from dates, oats, nuts and seeds. Also, they offer some omega-3s and protein for a balanced snack. It’s been a very long week around here. I’ve been in bed for 3 days fighting a bug that Shaun passed on to…

Pecan Pumpkin Spiced Date Bites

Pecan pumpkin spiced date bites. My kind of Halloween candy. And yes, these little energy bites really do taste like candy. They’re perfectly sweetened with dates and flavored with fall spices, including cinnamon, nutmeg, ginger and clove. These pumpkin spiced date bites are inspired by Nature’s Delight pumpkin spiced date rolls. Shaun and I first tried them while we were on Vancouver Island a few weeks ago. We were trying to find healthy snacks for our road trip and I stumbled onto these. As soon as I took that first bite, I knew I wanted to recreate a cheaper and equally delicious version in my kitchen. Especially considering that they’re a limited edition. This way, I get to enjoy them all year long if I want to. And I must say, they taste very…
