Instant pot cinnamon roll steel-cut oatmeal. A delicious, holiday-inspired bowl of oatmeal, made easier in the Instant Pot.
In one week tomorrow, it’s Christmas day. Also, in one week tomorrow, Shaun and I are leaving for California for 2 weeks. To say that I’m excited is an understatement.
We did all the Christmas things already, knowing that we’d be gone for Christmas, but there’s still something special about that day. I’m planning on listening to Christmas music in the car all day, whether Shaun likes it or not. Hah! That’s 9 hours in the car to be exact, from Vernon to Portland, Oregon.
It’s still one week away though, and until then, I’m working all week at the hospital and I’ll be working on some blog content for the weeks we’ll be gone. You can expect more recipes this week and 2 new blog posts every week while we’re gone and into the New Year.
Speaking of New Year, what kind of recipes would you like to see on the blog in January? I’d love to hear your thoughts!
And now, let’s get back to today’s recipe.
This Instant Pot cinnamon roll oatmeal has been my go-to oatmeal flavor in the past few weeks. It’s my way of eating cinnamon rolls, without the effort or the sugar. Of course this bowl of oats is not going to be as decadent as a real cinnamon roll, but trust me, it’s the next best (healthier) thing.
To make it sweet, I blended some dates into the almond milk, along with cinnamon and vanilla for flavor. This ensures that the sweetness is well blended, without getting any big pieces of dates.
I also add butter (or in my case, margarine) to the oats for flavor and richness. This results in buttery, cinnamon flavored oats, with a caramel-like sweetness. You can then top the oats with additional cinnamon, butter and maybe some raisins?
If sugar is not an issue and you’re not into dates, simply replace it with maple syrup or another sweetener. This way, you won’t have to blend anything. Also, if the oatmeal is not sweet enough to your taste, then add more dates or top it with maple syrup as well!
You can also check out my last post to learn how to make basic steel-cut oats in the Instant Pot – You can then flavor it as you like.
Let me know what kind of recipes you’d like to see in January, in the comments! And finally, have a good last week before Christmas.
Creamy steel-cut oats with cinnamon, butter and dates for a healthier cinnamon roll flavored breakfast. Make it in the Instant Pot and it will be cooked by the time you're done getting ready in the morning!
Add the almond milk, dates, cinnamon and vanilla to a blender. Blend until smooth. You may have some small pieces of dates left, this is okay, they'll break down during cooking.
Add the oats, blended milk and butter to the Instant Pot. Stir everything together.
Set the Instant Pot for 7 minutes on high pressure using manual mode or multigrain mode. Set the steam release handle to "sealing".
Once done, turn off the Instant Pot and do a natural pressure release for 10 minutes. After 10 minutes, release the remaining steam.
Stir the oats and add more milk if desired. The oats will continue to thicken as it sits. Serve with more cinnamon, butter and other toppings of choice.
To make the oats sweeter, top with maple syrup or use more dates.
You can use another kind of milk if preferred.
