Epic Vegan French Toast PB&J Sandwich

Behold, the most epic vegan French toast PB&J sandwich. Vegan coconut-crusted French toasts, stuffed with caramelized bananas, peanut butter, strawberry jam, granola and raspberries. I told you, it’s epic. I originally made this recipe for a contest I did with Crofter’s Organics jam. The contest is now live on Instagram, so check it out for a chance to win a Crofter’s gift pack. All you need to do is tell us which sandwich you like best: Mine or Crofters’. It’s that easy. Now, let’s talk about this sandwich. Believe it or not, but it’s not as complicated as it looks. Here’s how it goes: Make the French toast: The French toasts are made with plant-based milk, vanilla and coconut. Dunk the…

Spiced Banana Cake with Cream Cheese Frosting

April is a month full of celebrations for us, so it only made sense that I shared my favorite cake recipe: This spiced banana cake with cream cheese frosting. This recipe is inspired by Snixy Kitchen’s banana date cake, which I made for the first time last April. I haven’t stopped thinking about it since. Since today is my 24th birthday (where does the time go?!), I knew I had to make this cake again – with a few modifications to make it fruit-sweetened. I also made it for Shaun’s birthday (and Easter) on April 1st. Then I made it again last weekend to photograph and to adjust the recipe as needed. Finally, I’m making it one more time this weekend for myself. I mean, it’s my birthday after all and my favorite way…

Sugar-Free Peanut Butter & Jelly Muffins

Sugar-free peanut butter & jelly muffins, my new favorite snack. Also, welcome to March! How are we 3 months into 2018 already?! It seems like just a few weeks ago we were celebrating New Year… Without me noticing, March arrived and with it came nutrition month. I wish I could say I prepared something for the occasion, but that didn’t happen. It was March 2nd when I realized nutrition month had started already and I didn’t have anything planned. I started brainstorming some ideas on my walk to work and instantly felt overwhelmed, so I decided to keep it easy. The theme for nutrition month this year is “unlock the potential of food”, including the potential to fuel, discover, prevent, heal and bring us together. The potential to discover encourages fostering healthy eating habits in children by…

Sugar-Free Caramelized Banana Oatmeal

Sugar-Free caramelized banana oatmeal. In other words, the best oatmeal I’ve ever had. My go-to oatmeal has always been my peanut butter banana oats. It’s easy, delicious and satisfying and I didn’t think anything could ever replace it as my favorite. That was until I made this caramelized banana oatmeal. I will admit, the fact that it requires one extra dish means I will continue to make my easy peanut butter oats more often, but these oats will be around over the weekends. I can at least guarantee that. Especially on a rainy weekend like we just had. That’s right, after the extreme cold we’ve had over the last few weeks, the temperature rose to 10°C last weekend and we had heavy rain from Friday to Saturday. Now, all of our snow…

Chewy Oatmeal Zucchini Cookies

It’s been a crazy week. We’re leaving for Gaspésie today after work and I still haven’t packed. I’m counting on the two hours I’ll have before leaving to pack everything and prepare our food for the trip. Lets see how that goes! I wanted to start earlier, but somehow, all of my evenings were packed this week. I spent a whole evening getting a new phone and dealing with the details at the store. Then yesterday I drove down to Moncton to see a childhood friend that’s moving to Ottawa today. Finally, I spent the rest of my evenings studying for my exam that’s coming this November (my last exam ever before becoming a registered dietitian). Thankfully, I already have some energy bites ready for our trip (these and these…
