Sugar-Free caramelized banana oatmeal. In other words, the best oatmeal I’ve ever had. My go-to oatmeal has always been my peanut butter banana oats. It’s easy, delicious and satisfying and I didn’t think anything could ever replace it as my favorite. That was until I made this caramelized banana oatmeal. It’s been a crazy week. We’re leaving for Gaspésie today after work and I still haven’t packed. I’m counting on the two hours I’ll have before leaving to pack everything and prepare our food for the trip. Lets see how that goes! Recently, my go-to breakfast has been this blueberry flax oatmeal. I’m taking full advantage of blueberry season! Truth: This was initially supposed to be an overnight oat recipe. I tried it a few times, but it never ended up the way I wanted. It was a just a little too liquid for my taste – I like my oatmeal on the thick side. while I could have reduced the amount of liquid a little more and figured it out, I decided that since fall is coming, warm comfort food wouldn’t be a bad thing. I waited long enough to share this recipe with you guys, but I think Easter is the perfect occasion.  Not only is this Easter weekend, but it’s also my birthday weekend! It’s actually my 23rd birthday today, but since I’m working all day, I’ll be celebrating tomorrow.  I think this week was the busiest week of my internship yet.
