Hydrating Super Green Smoothie

Over the past year, I got 3 bad colds where I lost my voice for days. This is when I created this hydrating super green smoothie. That last cold happened in the same week we learned we were moving to British Columbia. I had 2 interviews and needed to work and prepare for our move. Needless to say I was a bit desperate to get my voice back at that point. Perfect timing, right? That week, I was drinking this smoothie daily. A smoothie I had created earlier that year when I had lost my voice the first time (the same week Shaun proposed – I really choose the best times!). The best vegan chickpea-nut butter ice cream cake. See what I did there? I combined chickpea and peanut butter to make chick(pea-nut). Yes, that means there is in fact chickpeas in this dessert. And no, you can’t taste them. They’re simply there for nutrition and texture. Trust me, it just works. This recipe takes one of my favorite recipes from the blog: My chickpea-nut butter ice cream. When I shared this recipe earlier this summer, I got some great feedback from you guys. Many of you made it and absolutely loved it! Cherry Coconut Overnight Oats

Cherry coconut overnight oats. Easy, creamy, nutritious and filled with all my favorite flavors. As I’m writing this, I’m sitting in our living room, darkened from the clouds and smoke outside. It’s 8:30 am outside, yet it still looks like 5 am. Today marks one week since the smoke invaded the Okanagan and there’s no sign of it going away any time soon. No-Bake Cherry Yogurt Tart

Ending the week with a delicious no-bake cherry yogurt tart. My parents are actually in Vernon for the weekend. They drove all the way from New Brunswick to British Columbia to bring Shaun’s car (plus they got to enjoy a trip across Canada, just like we did!) and I must say, it’s nice to see familiar faces in Vernon. Moving to a new city can feel lonely at times, despite being introverted and enjoying being alone most of the time. Going to work at the hospital 4 days a week is more than enough socialization for me… Hah! Plus I have Shaun to keep me company and we get to explore British Columbia together, which is more than I could ask for. It doesn’t stop me from missing my friends and family though. So…
