No-Bake Walnut Granola Bars

No-bake walnut granola bars. A new granola bar recipe to my already extensive list of energy bites and bars. I can’t help it, they’re my all-time favorite snack/dessert. These walnut granola bars are simple and require only 6 ingredients (7 if drizzling with chocolate) and less than 15 minutes. There’s really no better granola bar than homemade. Plus, they’re so much healthier than the sugar-laden pre-packaged bars you find at the store. These walnut granola bars in particular are packed with fiber from dates, oats, nuts and seeds. Also, they offer some omega-3s and protein for a balanced snack. It’s been a very long week around here. I’ve been in bed for 3 days fighting a bug that Shaun passed on to…

Chocolate Chunk Protein Bars

Celebrating the first day of spring with these chocolate chunk protein bars. I know these don’t necessarily scream spring, but I would honestly eat them every day of the year. That, and the salad I wanted to share with you guys today needed a bit more work, so I’m sharing these instead. The thing is, granola bars are my favorite thing to create. For some reason, when I feel uninspired in the kitchen and when every other recipe I make seem to fail, granola bars are always a success. They’re so easy and versatile, I can’t help but create a new recipe every season. These chocolate chunk protein bars in particular are inspired by my all-time favorite seriously addictive granola bars. If you haven’t made those, you’re…

Seriously Addictive No-Bake Seedy Granola Bars

If I could eat only one thing for the rest of my life, I would choose these seriously addictive no-bake seedy granola bars. I can honestly make a batch of these bars and eat almost half of it throughout the day. One for a morning snack, one with lunch, one as an afternoon snack and one or two in the evening… Half of the batch, gone. Oups. I could also make a batch and eat 2 or 3 bars before I even add on the chocolate. Like I said, they’re addictive! Probably not a good thing for someone with a sugar addiction. They may not have any added sugar, but that doesn’t stop them from being addictive. It doesn’t help that I’ve had a hard time with the photography for…

Nut-Free Caramel Rice Crispy Squares + SunButter Giveaway!

Today I’m sharing with you Nut-Free Caramel Rice Crispy Squares and something that helped me survive a year without peanut butter. If you knew me last year, then you know that I’m obsessed with peanut butter. I used to eat it 1-2 times a day every day of the week and I’m talking about a layer so thick, you start wondering if you’re having toast with your peanut butter. That had to change when I moved to Saint John for my dietetic internship. I moved in with my friend who’s severely allergic to peanuts, which meant no peanut butter in the apartment. I needed to find a replacement. Of course, Catherine (my roommate) had found some great products over the years and had a few suggestions. After trying…

Chocolate Pretzel Quinoa Bars

Happy Friday! I’m sharing some delicious and easy granola bars today (the perfect recipe to make this weekend!). That’s what I did last weekend and I think I’ll do the same this Sunday. If I have enough ingredients in my pantry… I’ve been surviving on what I have in the freezer and in my pantry for almost 2 weeks now, so it’s all getting pretty empty. I thought it would be a good idea to use up what I have before buying anything else. It’s a great way to save money and to get creative in the kitchen! I’ve been coming up with very weird recipes that where surprisingly good… I made a pasta sauce using soy milk, tapioca starch, garlic, margarine, cheese, salt…
