The Healthiest Peppermint Mocha

This may just be the healthiest peppermint mocha you’ll ever see.   I realize that this may be an exaggeration; I have no idea what other peppermint mocha recipes are out there. Nevertheless, this is the healthiest one I’ve ever had. Plus, it’s the perfect holiday drink. Peppermint mochas were always my holiday drink of choice when going to Starbucks. And I don’t know about you guys, but I’m all about making my favorite treats a little healthier. That way, we can enjoy our favorite treats and feel good about it. There’s still place for real treats of course… It’s all about balance.   Are you as excited for the holidays as I am?! Now that my dietetic exam is done, I have more time…

Creamy Cashew Chai Latte

This creamy cashew chai latte is just what you need to keep you warm this holiday season. First, how is it November already?! It seems like just a week ago I was excited for September and now the holidays are just around the corner. Has it snowed where you live yet? We haven’t had any snow yet, but the weather is slowly starting to cool. My morning walks to work are definitely getting a little colder!  This weekend, I was craving a warm, comforting drink and I unexpectedly made the best vegan latte recipe I’ve ever had. I knew I wanted to make a latte recipe this month, but I didn’t expect to make one like this. Can you believe that this latte doesn’t contain any milk at all? Yet, it’s absolutely creamy. Instead…

Caramel & Coconut Latte Overnight Oats

Here I am, writing on a Saturday again!  This internship is certainly keeping me busy during the week. I woke up at 4:45 in the morning for the last few days (including this Saturday!) for a big catering event. Yup, I’ll enjoy sleeping in tomorrow… By that, I mean waking up at 7 am without an alarm. The problem with being a morning person!  Other than the lack of sleep, I’m really enjoying my experience so far! I’m starting my internship with 11 weeks of food service management in the hospital. Then, I’m doing 18 weeks of clinical nutrition. During those weeks, I’ll be doing many different rotations, including diabetes, tube feeding, rehab, renal, neurology, cardiac, plastic surgery, burns, pediatrics, obstetrics (I’m so excited…

How-To: Cold Brew Coffee & Ice Cubes

My last blog post of the week! This may not be a recipe, but I thought it would be fun to make how-to posts on the blog. I have a recipe using cold brew ice cubes that I’d like to share with you guys soon, but first, I want to show you how to make cold brew. Trust me, after you learn how to make it, the possibilities are endless! Think lattes, iced coffee, smoothies… Are you convinced yet? First of all, what is cold brew coffee? It’s ground coffee beans soaked for a long period of time in cold water and then filtered without having to brew the coffee. It’s less acidic and smoother than regular coffee and it lasts longer when stored in the fridge. It’s great for…
