Greek Quinoa & Chickpea Salad

It’s Global Pulse Day and I’m celebrating with a healthy Greek Quinoa & CHICKPEA Salad! Chickpeas are hands down my favorite pulses. I must say that picking a favorite is a little difficult, because well… I love them all! But I think I’ll stick with chickpeas. From salad toppings to hummus and veggie burgers… You really can’t go wrong with chickpeas. What are your favorite pulses? In the spirit of Global Pulse Day, here are some of my favorite pulse recipes: Everyday Salad with Tahini Dressing & Chickpea Croutons Easy Black Bean and Quinoa Chili Vegetarian Lentil Pot Pie Creamy Roasted Beet Hummus Golden Roasted Cauliflower Dahl Crispy Chickpea Burger And now this salad! I’ve had this recipe saved up for a while now. Not for this particular…

New Year Tropical Green Smoothie

It’s back to reality this week. Well at least it is for me and probably most students, so I thought I’d share a healthy green smoothie to start the week off right. Is it cold where you live? As I’m writing this, we just had a big snowstorm. Now, I know that drinking a cold smoothie isn’t ideal in this kind of weather, but if you drink it inside, covered in blankets, then it’s not as bad. Right? Also, this smoothie is filled with tropical flavors, so if you close your eyes, you could imagine yourself on a beach somewhere warm… Last year, at this time exactly, I was flying back from Mexico with Shaun. Yeah, that’s not the case this year and it probably won&#8217…

Everyday Salad with Tahini Dressing & Chickpea Croutons

Meet my go-to salad. I’ve been eating this salad almost weekly for over a year now and I never get tired of it. What does that tell you? I just love crispy chickpeas and tahini with greens. I can’t get enough of it! What I love most about this salad is that you can change it up with whichever vegetables you have on hand. Here are some of my favorites: Kale Arugula Spring mix Romaine lettuce Spinach For added crunch, I like to use: Cabbage Shredded carrots Chickpea croutons Sunflower seeds or pepita seeds You probably have some of these ingredients on hand already? I know I always have one leafy green in my fridge, a few cans of chickpeas in the pantry and mason jars full of nuts and seeds. And I almost always…

Rudolph Nutella Donuts & Other Healthy Holiday Desserts

Happy Christmas Eve Eve! Here it is, a compilation of all my holiday desserts! I hope you find some inspiration for last-minute Christmas treats or even last-minute gifts?! Suggestion: fill a beautiful box with a loaf of pumpkin bread, truffles and cut-out cookies, then add a gift card for your friend/relative’s favorite restaurant! You could even add a copy of your favorite cookbook in there. It’s the ultimate foodie gift. Now enjoy these Christmas desserts, plus a new recipe at the end. 🙂 Easy Holiday Truffles I posted these truffles earlier this week and they’re the perfect addition to your holiday feast! They’re probably the healthiest and easiest truffles you’ll ever find. They’re made from only 3 ingredients, then rolled in beet powder, coconut flour…

Chai-Spiced Cut-Out Cookies

As I’m writing this, we’re having our first snow storm of the season. I think this recipe is perfect for the occasion! It would be a little more exciting if I could of stayed home and have a snow day, but it doesn’t work like that for my internship… I miss university! <— Here’s a sentence I never thought I’d say. 😉 Nevertheless, I braved the storm and arrived safely home after work. Now I’m warming up inside with a cup of coffee and a little Rudolph donut (you can get the recipe on my Instagram and Facebook page!). These cookies (and my donuts) were my project last weekend. I wanted to share Christmas desserts with you and I’m very happy with the results! For…
