Creamy Roasted Beet Hummus

Pink hummus is so much better than regular hummus. It just is. There’s something about eating pink food that makes it so much more exciting. It would probably be a good way to convince kids to try hummus… If they love this color of course. When I was testing this recipe, I had to find creative ways to use up almost 3 cups of hummus in a week between Shaun and me. That’s a lot of hummus for two people! So not only was I dipping vegetables in it, I was making beet hummus, avocado, cheese and lettuce sandwiches every day of the week. It was an easy lunch for work and it helped me use most of it. I also love seeing the look on people’s face when they see me eating a pink…

The Best Sugar-Free Apple Crisp

October is almost over and if you’re like me, you’re probably searching for ways to use up all the apples you picked this fall. Apple crisp is always my go-to. I hesitated to call this recipe “the best” because first of all, I’m not that confident in myself and second of all, it’s based on my opinion. However, when I tried to find a sugar-free version, I wasn’t surprised to find that every recipe contained either artificial sweeteners or maple syrup/honey. I don’t like the term sugar-free for that reason. Every time I see a sugar-free recipe, it either contains artificial sweeteners or maple syrup and honey. They might not be “refined sugars”, but they’re still very sweet, which would trigger my cravings…

Golden Roasted Cauliflower Dahl

I have more comfort food for you guys! And it’s the perfect recipe to make on a rainy weekend like this one. I actually have the apartment to myself this weekend, something that doesn’t happen often when you have two roommates! Since it’s raining all weekend, I’m planning to do some recipe testing and a few projects for my internship, but other than that, I’m relaxing! I really have to catch up on my sleep. These morning shifts are killing me lately! I’m a morning person and I love morning shifts, but lately I’m not used to getting up so early. This week I’ve been going to sleep at about 11:00 every night (which is late for me) and waking up before 6:00. Then I…

Spelt Oatmeal Pumpkin Cookies

Who’s planning to do some Sunday baking?! I AM! If you weren’t planning on it, then I might try to change your mind. Seriously, your Sunday needs these pumpkin cookies! Don’t worry, they’re also healthy. I made them with spelt flour, dates, pumpkin puree, oats and more delicious ingredients and spices. I honestly eat them for a morning snack every morning at work and they definitely help me get through my early shifts. That and coffee of course. Also, this is the best cookie dough I’ve ever tasted. Better than any sugar-filled cookie dough. I actually made this recipe this morning and left half of the batch uncooked in the fridge… and no I’m not planning to cook them later. I’m planning to do…

Spiced Root Vegetable Soup

Happy Monday! How was your weekend? We had a quiet weekend at home which was a nice change. Friday night, Shaun and I went for a small hike, then we had popcorn and wine while watching a movie. My idea of a perfect fall Friday night! Saturday, I stocked the fridge, did a bit of university work and baked some pumpkin cookies (the recipe is coming to the blog SO soon!). Finally, I spent most of Sunday cooking and cleaning. I love starting a new week with a clean house and a fridge full of prepared meals. I can certainly say that it was a productive weekend! I don’t always take the time on Sundays for meal prep, but now that I’m busy with my internship from Monday to Friday, the weekend is the only time…
