3-Ingredient Vegan Parmesan Cheese

3-Ingredient vegan parmesan cheese. Starting the week with another favorite kitchen staple. I’ve been busy in the kitchen all weekend and I finally feel like I caught up on work since I got back from California a few weeks back. I tested and photographed many recipes, including some for my new eBook (more on that here!). It was a productive weekend filled with delicious food. Speaking of the weekend, did you make anything good for the Super Bowl? I don’t exactly watch football, but I do like the idea of hosting a small party with friends and eating good food.  Of course, I like anything that involves food. Back to this vegan parmesan. I’ve been keeping a batch of this parmesan in the fridge at all times lately and it’s become…

Healthy Holiday Treats (New Ebook!)

I wrote an Ebook. An Ebook filled with healthy holiday treats. I still can’t believe it’s real! What will you find in this Ebook? 10 recipes, including 5 new recipes and 5 old favorites from the blog (with some new photos). 8 recipes being desserts and 2 being delicious sweet drinks. All recipes are vegan and sugar-free. Allergy information is included with each recipe. Many recipes are gluten-free, grain-free, soy-free, oil-free and nut-free. All recipes are simple and delicious. Sugar in found in abundance during the holidays and I created this book in hopes of helping others find balance this time of year. While there’s nothing wrong with having an occasional treat, especially during the holidays, it’s always a good idea to have some healthier alternatives…

Vegan Cashew Eggnog (Sugar-Free)

I hope you’re starting to get in the holiday spirit because I have a delicious vegan cashew eggnog for you guys today! Where do you stand on traditional eggnog? Do you like it or not? Growing up, I was obsessed with it and so was my whole family. As soon as eggnog would come out at the store, my mom would buy a few cartons and we’d go through all of it within days. We were all eggnog lovers. It’s only later that I realized that not everyone is as obsessed with this sweet milk as we are. Some say it’s sickeningly sweet. I didn’t understand them… Until now. I will admit, it’s been 4 years since I’ve had eggnog (since I stopped eating added…

No-Bake Walnut Granola Bars

No-bake walnut granola bars. A new granola bar recipe to my already extensive list of energy bites and bars. I can’t help it, they’re my all-time favorite snack/dessert. These walnut granola bars are simple and require only 6 ingredients (7 if drizzling with chocolate) and less than 15 minutes. There’s really no better granola bar than homemade. Plus, they’re so much healthier than the sugar-laden pre-packaged bars you find at the store. These walnut granola bars in particular are packed with fiber from dates, oats, nuts and seeds. Also, they offer some omega-3s and protein for a balanced snack. It’s been a very long week around here. I’ve been in bed for 3 days fighting a bug that Shaun passed on to…

Warm Turmeric Ginger Milk

Making winter days a little better with this warm turmeric ginger milk. Not only is it warm and comforting, but this milk’s bright color is such a happy sight on a cloudy day like this one. We’re expecting rain for the next couple of days, which makes me crave spring even more. I usually love winter, but this one has been dreadful. We were basically stuck inside from the end of December to the beginning of January due to the extreme cold temperatures. Since then, we’ve been experiencing drastic changes in temperature, which is not ideal for any outdoor activity. We seem to always have a few cold days with snow, followed by mild temperatures and heavy rain. It then freezes again and we’re left with icy roads and trails. Basically, I…
