Simple Avocado Toasts – 3 Different Ways!

Lately I feel like I’ve been living off avocado toasts. They’re so easy, filling and nutritious, I figured they were the perfect meal while moving in our new apartment. After a while though, plain avocado and lemon on toasts can become a bit boring. That’s when I started mixing things up and trust me, these avocado toasts are NOT boring! I came up with 3 different toasts, so let’s get right into it. My first avocado toast includes strawberries, melted Brie cheese (the best part!), balsamic vinegar and pistachios. I think this one is my favorite. I mean, strawberries, Brie and avocado!? There’s no better combination. Not during summer anyways. If you’re skeptical about adding fruits to your toast, don’t be, it’s the ultimate…

No-Bake Salted Caramel Energy Bites

As I’m writing this, I’m in a tent all by myself in the middle of nowhere. This is actually my first time camping alone and I’m quite enjoying it! I drove over 7 hours Tuesday to Quebec and I stayed in Parc National de la Jacques-Cartier for two nights. The first day it was raining, but I went hiking anyways. The clouds were hugging the mountains and it was beautiful! After hiking, I spent some time reading and doing yoga in my big tent, hiding from the rain (I had such a hard time putting up that tent by myself, I’m dreading having to put it up again tonight!) This morning I’m doing a small hike before leaving for Gatineau, where I’ll stay for one night. After…

Creamy Tofu & Avocado Pasta (Oil-Free!)

It’s finally summer in Canada and that means I can eat all the fresh fruits, vegetables and herbs from my parents’ garden again! YAY for free food! Since they had fresh basil, I thought it was the perfect opportunity to make my avocado pasta again. This is a recipe I’ve been doing every summer since I was 16 years old. It’s a delicious mix between pesto and a creamy Alfredo sauce. What I did differently this time is I added protein. Not chicken like I used to do sometimes, but tofu! It’s blended right into the sauce and it packs over 14 grams of protein per serving without tasting like tofu! One serving also has 10 grams of fiber and some healthy fats from the avocado, all under 400 calories! If you want even more…

My Classic Peanut Butter Banana Oatmeal

This wasn’t supposed to be today’s blog post, but I got too busy with work to test the other recipe one last time so it will have to wait until tomorrow! The struggle of working full time and blogging on the side. Thankfully, I had this recipe ready for tomorrow, so here it is, one day early! I have been eating oatmeal for breakfast for over 6 years now. In the beginning, it was those sugar laden bags of Quaker oats, but a lot has changed since then, including my obsession for peanut butter and the fact that I quit sugar. Now I make my own oatmeal flavors. I like to change the toppings once in a while, but the base is almost always the same: peanut butter and banana. It’s a match made in…

Healthy Digestion Smoothie

I have the most refreshing drink for you to enjoy this summer! I created this recipe when I was at the end of the low FODMAP diet a few weeks ago and I’ve been enjoying it ever since! For those of you who don’t know, the low FODMAP diet is a “diet” recommended for those who have irritable bowel syndrome. You simply avoid or limit certain foods high in FODMAPs (sugars that may not be digested or absorbed well and could be fermented by bacteria in the intestines when eaten in excess.) You follow this for a few weeks and then reintroduce them one at a time to determine if they worsen your symptoms or not. It’s not a long term diet, but rather a method to identify what triggers your symptoms. You should be guided by…
