Coriander Sweet Potato Soup with Toasted Cinnamon Pecans

I have a delicious holiday soup for you today: Coriander sweet potato soup with toasted cinnamon pecans. Yes, I’m starting to create and share some holiday recipes already. To be honest, Christmas is my absolute favorite time of the year and I always start getting in the holiday spirit in the first few weeks of November. A few weeks (or maybe days) after Halloween, I start listening to Christmas songs… Whenever Shaun is not around because he doesn’t get in the Christmas mood as early as I do. I don’t think many people do. Hah! I’ve been this way since I was a kid. I was the one to set the Christmas decorations at home early November, listening to Christmas songs and baking cookies. There’s no waiting for December…

Instant Pot Lentil Fricot

I’m going back to my roots today with a traditional Acadian recipe – Instant Pot Lentil fricot. As I said, fricot is a traditional Acadian recipe, which I grew up eating when living in the Maritimes. Traditional fricot is a dish made of chicken, potatoes, carrots, onions and dumplings, but since eating a mostly vegetarian diet, I decided it was time to make a plant-based version of one of my childhood favorites. If you’re not from the Maritimes, then think of fricot as a sort of chicken and dumplings soup. And believe me, it’s an easy and comforting recipe. My version is made chicken-free thanks to lentils. I used red lentils for protein, which also thickens the dish to make it stew-like and comforting. It’s then flavored with vegetable broth (instead of chicken…

Slow Cooker Vegetarian Pumpkin Chili

Slow cooker vegetarian pumpkin chili. Slow cooked for maximum flavor and made vegetarian and high-protein thanks to a combination of red lentils and black beans. This pumpkin chili has been a fall favorite around here for the past two years and I hope you’ll love it too. This is actually my first time sharing a slow cooker recipe on the blog and I have no excuse for it. Since I moved in with Shaun 4 years ago and he brought with him an old slow cooker, I’ve used it exactly 3 times. Two of those times being this week. The other time was 2 years ago when I made Half Baked Harvest’s Moroccan soup. I’m not sure how it’s been 2 years already, but it has. Two years ago, I was starting my dietetic…

Vegetarian French Onion Soup

Vegetarian french onion soup. One of my all-time favorite soups. Probably because it includes cheese and bread… Also because it reminds me of our trip to Mexico two years ago (has it really been two years!?). You may be wondering why I think of Mexico whenever I have French onion soup? It’s not exactly a Mexican dish… Let me explain. Shaun won a trip from work two years ago and we treated ourselves to a beautiful resort in Mexico. At our resort, we had a few restaurants to choose from every night, all of them included in our stay. Of course, we tried them all (except for the sushi place… Sorry, I’m not a fan of sushi). There was an Italian, a French and an American restaurant, all of which were amazing. Our favorite dish was the…

Curried Roasted Carrot & Cauliflower Soup

The past two days have been gray and wet and I’ve been craving some cozy soups – This curried roasted carrot & cauliflower soup was just what I needed. Soup has been a big part of my diet over the last few stressful weeks. I’m feeling more and more anxious with my dietetic exam coming up in exactly one month now. There’s something comforting about soup and I’ve been turning to this easy meal now more than ever. I honestly haven’t felt this anxious in two years and I did not miss this feeling. For this reason, I’m trying to prioritize self-care a little more – Something that I sadly ignored over the last few months. It’s sad how we need to feel stressed to…
