Savory Vegan Biscuits with Scallions

Savory vegan biscuits with scallions. I realize now that these would have been a good recipe for Saint Patrick’s Day, but I’m one day late. Oh well! I hope you all had a good weekend, whether it involved green beer, matcha or nothing Saint Patrick’s Day related at all. For me, it involved a lot of work on upcoming projects, many walks outside and some matcha. I think it’s safe to say that spring is here in the Okanagan. One month earlier than I was used to seeing spring in eastern Canada. I’m not mad about it at all. This weekend we had temperatures in the double digits and it’s looking like this for the next few weeks. We had a warm, sunny weekend and I took advantage…

Whole Wheat Vegan Biscuits

Healthier whole wheat vegan biscuits, perfect for holiday entertaining! Biscuits always had their part in all of our big family dinners. More specifically, growing up, my grandmother would always make us homemade biscuits to have as a snack or as a dessert in a strawberry shortcake. Strawberry shortcakes were our favorite, especially served with ice cream. Now I wanted to create a healthier version to our traditional white flour biscuits. My version is made vegan and a little heartier (but still so good) with whole wheat flour. If you’re not into whole wheat flour, don’t worry, you can easily sub the flour for all-purpose white flour! To make this recipe vegan, I used vegan margarine/butter and I replaced buttermilk with my own mix of almond milk and apple cider vinegar. Again, you can substitute…

Mushroom & Caramelized Onion Pizza with Sage Pesto

Meet my favorite winter pizza: Mushroom & caramelized onion pizza with sage pesto. For the first time, I decided to make a vegan pizza. For the past several months, I’ve been trying to cut back on dairy as much as I can. Why? First, I prefer to eat a mostly vegan diet, but also, I know it worsens my acne. In the past few weeks, I’ve been desperately trying to find some natural ways to clear my skin, including limiting dairy. It’s something I talked about during my vegan month this year and it’s something I’ve been taking more seriously lately. So yes, as much as I love cheese on a pizza, I made us a vegan pizza this time. Instead of dairy cheese, I used my favorite (but not cheap) vegan feta. It’s…

No-Knead Whole Wheat Seeded Bread

No-knead whole wheat seeded bread… The perfect recipe to make this snowy weekend. Yes, we just got another snow storm. The third one in 3 weeks and somehow they all fell on a Thursday. I’m just hoping this is the last of it – I can’t wait for the spring weather to finally arrive! For now though, I’ll just keep spending my weekends inside, staying cozy and baking. Maybe going for a hike in the snow. If your weekend is just as snowy (or maybe rainy), you need to make this bread. Not that you need an excuse to make fresh bread. Seriously though, if you’re scared of making homemade bread, this is the recipe for you. Honestly, I made homemade bread for the very first time last January. Before then, I…

Sugar-Free Peanut Butter & Jelly Muffins

Sugar-free peanut butter & jelly muffins, my new favorite snack. Also, welcome to March! How are we 3 months into 2018 already?! It seems like just a few weeks ago we were celebrating New Year… Without me noticing, March arrived and with it came nutrition month. I wish I could say I prepared something for the occasion, but that didn’t happen. It was March 2nd when I realized nutrition month had started already and I didn’t have anything planned. I started brainstorming some ideas on my walk to work and instantly felt overwhelmed, so I decided to keep it easy. The theme for nutrition month this year is “unlock the potential of food”, including the potential to fuel, discover, prevent, heal and bring us together. The potential to discover encourages fostering healthy eating habits in children by…
