It’s that time of year again – It’s time to look back at the top 10 recipes of 2018!

How is this the last day of 2018? Every year I ask myself the same thing and every year seems to go by faster and faster. I believe my parents and grandparents now when they say time goes by faster the older you get. I really do.

So here we are again, looking back over another year of recipes.

These are the top 10 recipes of the year, according to you. In other words, these are the recipes that were the most visited and tried this year. So if you’re new to the blog, this is probably a good place to start.

This is the second time I share a top 10 list and just like last year, each recipe on this list is sweet, except for one. So now, let’s look at the top 10!

Caramelized banana oatmeal. In other words, the best oatmeal I’ve ever had. My go-to oatmeal has always been my peanut butter banana oats. It’s easy, delicious and satisfying and I didn’t think anything could ever replace it as my favorite. That was until I made this caramelized banana oatmeal. I will admit, the fact that it requires one extra dish means I will continue to make my easy peanut butter oats more often, but these oats will be around over the weekends. I can at least guarantee that. Especially on a rainy weekend like we just had. That’s right, after the extreme cold we’ve had over the last few weeks, the temperature rose to 10°C last weekend and we had heavy rainfalls from Friday to Saturday. Now, all of our snow is gone. Almost all of it! As much as I miss the snow (I love having a white winter), it did clear our very icy roads and made running and hiking a little easier. Our snow was so hard and icy that I couldn’t snowshoe anyway. Now it’s a blanc slate and I’m ready for a fresh layer of fluffy snow. Beautiful fluffy snow almost never lasts in Saint John though… One way or another, it always ends up being ruined after a few days, whether it’s from rain, freezing rain or increased temperatures. For now, I’ll just take advantage of the cleared trails and go hiking and running a little more. That’s what I did on Sunday. That and test some new recipes for the blog, including this delicious bowl of caramelized banana oatmeal. You may be wondering how I caramelize my bananas without sugar? The answer: orange juice. I know it sounds a little strange, but hear me out! I went to Cuba with my family when I was in high school and one of my favorite memories from that trip is a dish they made with bananas. Such a foodie thing to say (I can’t help it!). While I don’t remember exactly how they made it (it’s been about 10 years), I do remember they used bananas, orange juice and butter. They may have added honey as well. They stirred everything on the pan and served it just like that. It was heavenly. This dish came back to me a few months ago. I wanted to make caramelized bananas to add to my oatmeal and the answer suddenly came to me. Orange juice! Just like they did in Cuba! Of course I skipped the honey, but guys, it turned out perfectly! All I do was add a small amount of margarine to a non-stick pan. I layer the sliced bananas and add a squeeze of orange juice. Cook for approximately two minute on each side and voila! You’ve got some sugar-free caramelized bananas. It’s the best, especially when used as a topping for oatmeal. Just try it, you won’t regret it.
